These are great for parties and family get-togethers. This recipe makes about 6 dozen. You can make them ahead of time and freeze. Just take them out and thaw them about an hour before baking.
2 (10 ounce) packages frozen chopped spinach, thawed and drained
2 cups Italian-style seasoned bread crumbs
1 cup grated Parmesan cheese
1/2 cup butter, melted
1 onion, finely chopped
6 eggs, lightly beaten
1 t garlic powder
1/2 t basil
salt and pepper to taste
Preheat oven to 350 degrees.
In a medium bowl, combine ingredients. Mix well. Shape the mixture into 1 inch balls (If you make them with a cookie scoop, they will be the same size and cook at the same rate.).
Arrange the balls in a single layer on a large baking sheet. Bake in the preheated oven 20 minutes, until lightly browned. Serve on a hot plate or tray. Make approximately 70 balls.

ReplyDeletethis is an old family recipe. we bring them everywhere. they heat up great and arent at all bad cold. people have been known to fight over the last ball on more than one occasion.
