Ever wonder what it takes to cook meatloaf for 100 people?

First... the ingredients, which includes 30 pounds of hamburger...
30 pounds hamburger
30 eggs
10 cups bread crumbs
10 packages onion soup mix
worchestershire sauce
house seasoning
Mix everything together... To make it easier, I did it in 3 batches.

3 pans... 2 loaves each

Bloody Mary Ketsup Dip

This is a spiced up version of a cocktail sauce. Basically the flavor of a bloody mary mix. If you use it on french fries, sprinkle fries with celery salt when you pull them out of the oil. Then, dip them in this sauce. Yum! It's good of fried fish, chicken nuggets, fried oysters, fried livers, etc.

The ingredients...
1 cup ketsup
1 T hot sauce, or to taste
1 T Worcestershire sauce
2 T Horseradish sauce
splash of lemon juice
salt and pepper, to taste

Mix everything together...

Dish it up and it's ready to go.

Super Easy Chicken Cordon Blue !!!

I love Chicken Cordaon Blue! I love the flavor, but not the work. This is so much easier than rolling and dredging and dipping and frying... It also tastes so amazing! I'm not putting the traditional method down. As a matter of fact, I love the presentation and textures of the traditional. But this casserole never turns out dry and it's easy! It's a no-fail recipe! :-)

Chicken Cordon Bleu Casserole

6 Chicken Breasts, cooked and shredded
6 Ham Slices, rough chopped
6 Swiss Cheese Slices

1 (10.75 oz) can Cream of Chicken Soup
1 cup Sour Cream
½ cup White Wine or White Grape Juice
1 tsp Garlic Powder
1/2 tsp Basil
1 tsp Pepper
Salt, to taste
1 (6oz) Dry Stuffing Mix (Chicken or Cornbread Flavor)

Preheat oven to 350 degrees. Place chicken in greased pan. Top with ham and then cheese slices. In a bowl, combine soup, sour cream, wine, garlic, basil and salt and pepper. Mix well and pour mixture over chicken. Top with stuffing mix. Bake covered for 30 minutes. If you like your topping extra crunch, remove cover and bake for another 5 minutes.

BBQ Pork Chops

5 Pork Chops

1 yellow onion, chopped
2 garlic cloves, minced
1 cup ketsup
1/4 cup brown sugar, light or dark
1/4 cup apple cider vinegar
1/4 texas pete
2 tbsp worchestershire sauce

Preheat oven to 350 degrees. Season chops with salt, pepper and garlic powder. Place chops in a baking dish and cover. Bake chops for 30 minutes. Saute onion and garlic in oil in a large pan. Drain any excess oil. Add the rest of the ingredients and bring to a boil. Reduce the heat to low and simmer about 10 minutes. Cover chops with sauce and return to oven for 15 minute or until done.

Chicken Creole

In honor of Mardi Gras... I had to post a creole recipe!

4 skinless, boneless chicken breast halves
salt and pepper, to taste
Creole-style seasoning, to taste
2 tbsp butter
1 (14.5 ounce) can stewed tomatoes, with liquid
1 stalk celery, diced
1 green bell pepper, diced
4 cloves garlic, minced
1 large onion, diced
1 (4 ounce) can mushrooms, drained
2 tbsp tomato paste
1 cup of chicken broth
Louisianna Hot Sauce, to taste
Cayenne pepper, to taste

Season chicken with salt, pepper, and Creole-style seasoning to taste. Pan sear the chicken in butter. Cool chicken and tear into chunks. Place chicken in a medium sauce pan. Stir in tomatoes with liquid, celery, bell pepper, garlic, onion, mushrooms, tomato paste broth, and hot sauce. Simmer for 1 hour.

Creole Seasoning

2 tablespoons onion powder
2 tablespoons garlic powder
2 tablespoons dried oregano
2 tablespoons dried basil
1 tablespoon dried thyme
1 tablespoon black pepper
1 tablespoon white pepper
1 tablespoon cayenne pepper
5 tablespoons paprika
3 tablespoons salt

In a small bowl, combine onion powder, garlic powder, oregano, basil, thyme, black pepper, white pepper, cayenne pepper, paprika and salt. Store in an airtight container.

Pork Stew

1 tablespoon extra virgin olive oil
2 pounds cubed pork stew meat
salt, pepper and garlic powder to taste
2 tablespoons cornstarch, or as needed
8 red potatoes
1 green bell pepper, chopped
1 red bell pepper, chopped
1 sweet onion, diced
1 (11 ounce) can corn, drained
1 (14 ounce) can stewed tomatoes
1 (10.75 ounce) can cream of mushroom soup
1 (14 ounce) can beef broth
1 tablespoon Italian seasoning
1 1/4 cups milk

Heat the olive oil in a skillet over medium heat. Sprinkle pork on all sides with salt, pepper, and garlic powder, and lightly coat with cornstarch. Place pork in the skillet, and cook until lightly browned but not done. Add potatoes, green bell pepper, red bell pepper, onion, and corn. In a bowl, mix the tomatoes, cream of mushroom soup, broth, and Italian seasoning. Add to meat and vegetables. Cover, and cook 1 hour on Medium. Reduce to slow simmer, add milk and continue cooking at least 1 hour. Serve over rice or cornbread.

Mayonnaise Cake

I'm still stuck in "Old Stuff" mode! I love these recipes! Does anyone remember this recipe???

1 cup mayonnaise
1 cup sugar
2 cups flour (sifted before measuring)
1 heaping tsp soda
pinch of salt
4 tbsp cocoa
1 cup water
1 tsp vanilla

Cream the mayonnaise and sugar. Sift together dry ingredients and add alternately with water while beating with mixer on low speed, or by hand. Cook in 2 greased layer pans at 350 degrees for 25 or 30 minutes.
This recipe is dated May 9, 1953.

It's not the prettiest cake, but the flavor... Mmmmm!

A Pictorial Version of the Pork Scallopini Recipe

The ingredients

The pork chops have been pounded thin.

The breading station

Dipped in the egg wash...

Then coated with seasoned bread crumbs.

While the chops are frying, heat a cup of
beef stock or both and pour in a baking dish.

Drain the chops.

Add to the pan of broth.

Bake at 350 degrees for about 30 minutes.

When done, most of the both will be absorbed.

Seriously... fork tender!

Supper's done! I usually make my homemade Mac-n-Cheese,
but Elliott requested Shells and Cheese...
