Shortcut Lemon and Blueberry Pound Cake with Blueberry Glaze

This cake is super simple. The blueberry and lemon combo is delicious, and poking holes in the cake lets the glaze soak into it making it very moist! The cake mix shortcut saves so much time and work. People will think you spent all day in the kitchen, but it was quick and easy!

Cake Mix:
Lemon Supreme Cake Mix
1 cup water
1/2 oil
3 eggs
1 cup blueberries
2 tablespoons flour

Preheat oven to 350 degrees. Grease and flour a loaf pan.

In a large bowl, mix the cake mix, water and oil. Add eggs one at the time. Mix until well combined. Toss blueberries in flour. (This keeps them from sinking in the batter.) Add them to the batter. Pour into the prepared loaf pan. Bake at 350 degrees for 45 minutes to 1 hour, or until a toothpick inserted comes out clean.

Blueberry and Lemon Glaze:
1½ cups powdered sugar
2 tablespoons lemon juice
1/4 cup blueberries, mashed

In a small bowl mix the confectioners' sugar, lemon juice and zest together until well blended. Use a toothpick or skewer, poke holes in the cake for the glaze to soak into.
Using a large spoon, spoon the glaze onto the cake and spread it around using the back of the spoon.

Mama's 7up Pound Cake

Mama's Pound Cakes were always a hit! She made big batches of them to freeze and gift later. She would always warn us kids when she was making them. She'd send us outside while they were baking because she didn't want us running around and making them fall. My older brother would always sneak in and slam the oven door on one, because that meant she would let us have the one that fell. It was always the most moist pound cake ever! Well, mine fell and they are super moist! They didn't really need the glaze, but the hubby asked for it!

Mama's 7up Pound Cake

2 sticks butter
1/2 cup shortening
3 cups sugar
5 eggs
3 cups self-rising flour
1 tsp vanilla
1 tsp lemon extract
8 oz 7up

Cream butter and shortening. Add sugar. Add eggs, one at a time. Add flour gradually. Add flavorings. Slowly add 7up. Mix until combined. Do not over mix.

Pour into loaf pans and bake at 325 degrees for 45 minutes - 1 hour or until a toothpick inserted comes out clean.

Note: I used disposable pans that were smaller than loaf pans and cooked in 45 minutes. Loaf pans will take about an hour. Just check them with the toothpick method.

Too Much Chocolate Cake with Ermine Frosting

BTW...
He likes the frosting just as much as the cake!
Maybe more!

I made this cake for my hubby today. He says, "There's no such thing as too much chocolate!" Here's the recipe. It's my kind of baking... simple, easy, very little measuring and just plain good!

Too Much Chocolate Cake

1 (15.25 ounce) package devil's food cake mix
1 (5 ounce) package instant chocolate pudding mix
1 cup sour cream
1 cup vegetable oil
4 eggs
1/2 cup warm water
2 cups mini semisweet chocolate chips

Preheat oven to 350 degrees.

In a large bowl, mix together the cake and pudding mix, sour cream, oil, beaten eggs and water. Stir in the chocolate chips and pour batter into a well-greased 9x13 pan. Bake for 30 minutes, or until a wooden toothpick inserted comes out clean. Cool cake thoroughly.

Ermine Frosting

Ermine Frosting is an old fashioned/Vintage recipe. It's claimed to be of French origin, others claim it is German based. It is also often known as “boiled milk frosting”. It’s silky smooth and less sweet than traditional buttercream and is the traditional frosting used for red velvet cake. It was used before Cream Cheese Icing came along.

1 1/2 cups Cold Milk
7 1/2 tablespoons All Purpose Flour
Pinch of salt
3 sticks Butter, room temperature
1 1/2 cups granulated Sugar
1 teaspoon Vanilla

In a medium saucepan, whisk flour into milk and add a pinch of salt. Bring to a boil over medium heat. Whisk constantly. (Do not walk away!) It will thicken like soft mashed potatoes. Place in a bowl and cover against mixture with plastic wrap. (to keep a skin from forming) Let cool.

Cream butter and sugar until light and fluffy. Add vanilla. Whip in flour mixture. If loose, refrigerate until stiff. Frost cake as usual.

Carrot Cake Roll (AKA Kitchen Fail)

Quite frankly, with the cost of groceries these days, I just decided to get a box mix to make this cake, and I'm glad I did! Major fail! LOL, we discovered that our kitchen floor has sagged under the counter and stove, so the oven is not level. It doesn't make a big difference for the most part, but for a thin sheet cake to roll and not crack, the thickness has to be consistent. You can see the sliced roll is thick in spots and thin in others. BUT it tastes amazing!

Carrot Cake mix (follow mix instructions)

Preheat oven to 350 degrees F. Cook cake in a parchment lined sheet pan. Bake for about 15-20 minutes.

Cream Cheese Icing:

8oz Cream Cheese, softened
16 oz Powdered sugar
1 tsp vanilla

Mix cream cheese and sugar until creamy. Add vanilla and mix.

For roll:

Damp kitchen towel
Parchment paper
Sugar

Place damp towel on counter. top with a sheet of parchment paper. Sprinkle with sugar so the warm cake doesn't stick. Invert cake onto parchment and towel. Remove top parchment paper. The take the end of the towel and start rolling the cake end to end. tuck the end of the towel in and set aside to cool to room temperature.

When the cake is at room temperature, unroll and ice the cake. Roll and sprinkle with powdered sugar.

Red Velvet Cheesecake

Red Velvet CheeseCake

Growing up, I always had Mama's Red Velvet Cake. She specialized in red velvet. I also loved cheesecake. I don't remember Mama ever making one, but we would order it for special occasions. The two desserts are my families favorite, so years ago, I decided to put the two together into one three-layered dessert! Just fyi, read the assemble directions at the bottom of the recipe to find my tips on time and ease of preparing the cake.

Judy's Red Velvet Cake Layers

1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 teaspoons cocoa
3 tablespoons red food coloring
2 1/4 cups flour
1/2 teaspoon salt
1 cup buttermilk
1 teaspoon soda
1 tablespoon vinegar
1 teaspoon vanilla

Cream shortening and sugar. Add eggs. Mix well. Mix cocoa and food coloring in a cup. Add to eggs and sugar. Add vanilla. Sift flour and salt. Add, alternating with buttermilk. Add soda and vinegar. Let foam and FOLD into mixture. Divide batter into two 8 inch greased and floured cake pans. Bake at 350 for 30 minutes, or until a toothpick comes out clean.

Icing
1/2 cup butter, room temp
8-ounces cream cheese, softened
1 box powdered sugar
1 teaspoon pure vanilla extract

Whip together until creamy. Spread on cake. *

Rich and Creamy Cheesecake Layer

1 tablespoon unsalted butter, melted

3 tablespoons graham cracker crumbs

2 pounds cream cheese

1 1/4 cups sugar

4 large eggs

1 teaspoon minced lemon zest

2 teaspoons vanilla extract

1/4 cup heavy cream

1/4 cup sour cream

1. Adjust oven rack to middle position and heat oven to 500 degrees F.

Brush the bottom and sides of an 8-inch springform pan with butter. Sprinkle crumbs over bottom. Tilt pan in all directions to coat evenly with crumbs. Cover pan underneath and along sides with a sheet of heavy-duty foil and set on a cookie sheet.

2. Meanwhile, beat cream cheese in a bowl of electric mixer until smooth. Gradually add sugar and beat on medium speed until sugar dissolves,

about 3 minutes. Add eggs, one at a time, beating until just incorporated and scraping down after each addition. (If you don't scrape down the bowl after each egg, cream cheese that sticks to the bowl will ultimately show up as lumps in the batter). Add zest and vanilla and beat until just incorporated.  Remove bowl from mixer; stir in cream and sour cream.

3. Pour batter into the prepared pan. Bake cake at 500 degrees for 10 minutes. Reduce oven temperature to 200 degrees (prop oven door open with a wooden spoon until temperature reduces). Bake until the cheesecake perimeter is set but center jiggles like Jell-O when the pan is tapped, about 1 hour longer.

Remove the springform pan from the oven and set on a wire rack, cool to room temperature. Cover and refrigerate until chilled, at least 4 hours. (Can be refrigerated for up to 4 days). *

To Assemble Cake:

*I cook the cheesecake first. It takes longer to cook and longer to chill/freeze to handle. Once the cheesecake cools, wrap and put it in the freezer for at least an hour, then make the cake layers. Cool them on racks. I even put them in the freezer for a while to make sure they are cold when working with the icing.

Spread a tablespoon of icing on the bottom of the cake plate to hold the red velvet layer steady. Add a cake layer to the plate. Add a little icing to the top. You don't need much. The cheesecake is moist enough on its own. Place the cheesecake on top. Top with the other red velvet layer and finish icing the remained of the cake.

I made this cake for my hubby's birthday today. He says, "There's no such thing as too much chocolate!" Here's the recipe. It's my kind of baking... simple, easy, very little measuring and just plain good! I did use Cream Cheese Icing at his request!

1 (5.9 ounce) package instant chocolate pudding mix
1 cup sour cream
1 cup vegetable oil
4 eggs

Mama's Coconut Cake

Mama's Coconut Cake has finally come back to reality. If anyone remembers this legendary cake, let me know. She never publicly released the recipe. Years ago, I asked around. People said they had the recipe, but theirs never measured up to the taste of hers. I remembered a secret step she added to hers, and I think I got it right, finally!!!

This cake was Mama's pride and joy. She never gave anyone the "secret" she added to the recipe. * She would give them the recipe but left one step out. They would fuss at her and tell her that it didn't taste the same! She would make one for them, (for free) but she kept the recipe for herself. She said that she figured it out and anyone else could too!

A while back, I had a man that received this cake for a high school graduation dessert contact me. He described the taste and texture. He told me that he had been in search of this cake for 36 years. I laughed, and told him it was Mama's recipe. He asked if I could try to duplicate it. That is when the journey began. At first, he didn't think I got it right. After a couple of busy days and forgetting about it, he tried another wedge. He was shocked at the transformation the cake had made. The cake layers had soaked up some of the filling leaving incredibly moist layers, creamy sweet filling, and a buttery cream cheese icing that melded into the perfect cake of his past. After 36 years, his cake nirvana moment! Just trying to make Mama proud!

For the cake layers:
1-1/2 cups sweetened shredded coconut
3-1/4 cups cake flour (sifted)
1 tablespoon plus 1 teaspoon baking powder
1-1/4 teaspoons salt
1 (13-1/2 ounce) can coconut milk
1/4 cup + 2 tablespoons stirred, sweetened cream of coconut (such as Coco Lopez)
5 egg whites
1-1/2 teaspoons pure vanilla extract
1-1/2 teaspoons pure coconut extract
1-1/4 cups granulated sugar
2 sticks unsalted butter, at room temperature
3 large eggs

Preheat the oven to 350 degrees. Generously coat 3 (8-inch) round cake pans with shortening and flour the pan, discarding the excess.

Place shredded coconut in the bowl of a food processor and pulse until very finely chopped.

In a large mixing bowl, combine the chopped coconut, flour, baking powder, and salt. In a separate bowl, whisk the coconut milk, cream of coconut, egg whites, vanilla, and coconut extracts until completely blended.

In the bowl of a stand mixer, cream the sugar and butter on high speed until very light and fluffy, about 5 minutes. Reduce speed to medium-low and beat in the three whole eggs, one at a time, until well combined. Add the flour mixture, alternating with the coconut milk mixture, to the creamed butter, starting and ending with the flour.

Divide batter equally into the three prepared pans. Bake the layers until they are light golden and set, and come out clean when pricked with a toothpick, approximately 35 minutes. Cool the cakes in the pans for 15 minutes. Cut around the edges with a pairing knife and remove the cakes to wire racks. Cool completely before moving forward with the recipe.

*Mama's Secret!
Mama brushed the layers with coconut amaretto.

For the coconut filling:
1-1/2 cups sweetened shredded coconut
4 ounces (1 stick) unsalted butter, cubed
1-1/4 cups heavy cream
3/4 cups granulated sugar
1 tablespoon cornstarch
1 tablespoon water
1 teaspoon vanilla bean paste or pure vanilla extract
Pinch of kosher salt

Place shredded coconut in the bowl of a food processor and pulse until very finely chopped. Set aside.

In a medium to large saucepan, bring butter, cream, and sugar to a boil over medium-high heat. Cook, stirring occasionally, until the butter is melted and sugar completely dissolved.

Meanwhile, whisk the cornstarch, water, vanilla bean paste, and a pinch of salt together in a small bowl, then stir the mixture into the saucepan with the cream mixture. Bring cream back to a boil, stirring constantly. Once the mixture returns to a boil, cook for an additional minute or so, until just thickened.

Remove the saucepan from the heat and stir in the chopped coconut. Continue stirring for another minute or so to release some of the heat. Transfer the filling to a mixing bowl and cool at room temperature for an hour. Transfer to the refrigerator and chill, stirring occasionally, until cool, 3-4 hours (or overnight).

When ready to assemble the cake, beat the chilled filling with a handheld mixer on high speed until thick, light, and fluffy, approximately 1-2 minutes.

For the coconut frosting:
1 stick unsalted butter, at room temperature
8 ounces cream cheese
2 teaspoons pure coconut extract
1 teaspoon pure vanilla extract
1 (16 ounce) box confectioners' sugar

3 cups sweetened shredded coconut plus more as needed, for garnish

Place butter and cream cheese in the bowl of an electric mixer and beat on medium speed until light and creamy. Turn mixer on low and add coconut extract and vanilla, followed by the confectioners' sugar. Continue beating until smooth, about 3 minutes.

To assemble the cake: Place one cake layer on a large plate or cake stand and coat with half of the coconut filling. Add the second cake layer and cover with the remaining coconut filling. Add the third cake layer. Frost the top and sides of the cake with a crumb coat of coconut frosting, followed by thicker layer. Thoroughly cover the frosted top and sides of the cake with shredded coconut, pressing gently to adhere it to the cake. For the cake to be the moist delicious cake of the past, let it rest overnight in the refrigerator. It gets better with time.

Fruit "Cake"

The hubby and I made this whimsical Birthday "Cake" for a friend. Her daughter contacted me and told me that her Mom really didn't care all that much for cake, so could I make her a cake out of fruit. She sent me a picture as a reference, to let me know what she was looking for in a fruit cake. It also had to be sturdy enough to make the trip to the beach where they are vacationing! The hubby and I went through image after image trying to find just the right designs to make the cake special... after all this lady shares the same name as my Mama... Judy! So, she's pretty special to me anyway! Love you, Judy! I hope your birthday was as special as you are! Have a great time at the beach with your family!!! Have fun and Safe travels!

Happy Birthday Judy !!!
