Today you get a two for one recipe! The hubby called me with an idea to do a bacon wrapped potato. When I told him that I was out of potatoes, he quickly volunteered to go by the grocery store on his way home. If you knew how much he hates going to the grocery store, you'd know what a big deal that was to me! Well, I gave him a short list, but he was hungry so I got more than what was on my list! He picked up a few extra things... like peanuts for me to boil, Sweet Heat Potato Chips, Nutty Bars and Oatmeal Creme Pies! Never go to the grocery store hungry!!! LOL
BTW... He wanted me to do new potatoes, but he bought me baking potatoes. When I pointed that out, he asked what difference that makes. I said, "I don't know! It's your recipe!" LOL
I made MEATLOAF (click for the recipe) yesterday. I saw an idea on Mr Food's cooking break during the news, and I wanted to try it... Fried Meatloaf! After the meatloaf set up in the frig overnight (that's important), I sliced them and set up the breading station... a dish of seasoned flour, a dish of egg wash and a dish of seasoned bread crumbs. I dipped them in the flour, then the egg wash and finally the bread crumbs. I pan fried it in my cast iron skillet with a little oil until golden brown.
The Hubby's Bacon Wrapped Potatoes...
4-6 potatoes, cut into wedges
4-6 pieces of bacon
flour
garlic powder
salt and pepper
Preheat the oven to 400 degrees. Mix the flour and seasonings in a large bowl. Add the potatoes and toss to coat the wedges. Wrap with the bacon and place on a baking sheet. Bake for 20-30 minutes or until the bacon is good and crispy and the potatoes are golden brown.

Ever wonder what it takes to cook meatloaf for 100 people?
First... the ingredients, which includes 30 pounds of hamburger...
| 30 pounds hamburger 30 eggs 10 cups bread crumbs 10 packages onion soup mix ketsup mustard worchestershire sauce house seasoning pepper |
| Mix everything together... To make it easier, I did it in 3 batches. |

Meatloaf Recipe for 40 to 50 People!
I was inspired by a friend today. She was trying to do the math in taking a recipe for 6 and turning it into a recipe for 250! It's not as easy as you think. (6 tablespoons x 41.6666666) Not only do you have to do the math on the ingredients, you also have to have a bowl, pan or container large enough to mix the recipe. I decided to publish my recipe for a large meatloaf that feeds my Wednesday Night Supper group. Enjoy!
9 cups bread crumbs*
1 2/3 cups ketchup
6 pkgs onion soup mix
1 tbsp mustard
1 tbsp worcestershire sauce
1 tbsp steak sauce
2 to 3 cups warm water**
1 lb bacon
Preheat oven to 350 degrees.
In a large bowl mix ingredients well. Divide meat mixture in half and place each half in a buffet pan. Pat out flat. Cover with bacon. Brush with tomato sauce if desired. Bake for 1 to 1 1/2 hours or until meat is fully cooked.
*Bread Crumbs - I use the parmesan flavor.
**Water - I only use enough water to moisten the mixture to combine.

Meatloaf
Good down home cooking... just about every household has it's own meatloaf recipes. The possibilities are endless. This is a good basic recipe with a twist at the end. Yeah, I know I can never leave well enough alone!
2 pounds ground chuck
2 eggs
1/4 cup ketchup
1 tablespoon mustard
2 tablespoons worcestershire sauce
1 (1 ounce) package dry onion soup mix
1/4 cup grated parmesan cheese
1 cup Italian-style dried breadcrumbs
salt, pepper and garlic powder to taste
Mix ingredients and place in 8x8 pan or casserole dish. Bake at 350 degrees for 45-55 minutes.
**For an added kick, remove meatloaf from oven at 40 minutes... top with bacon and brush with 8oz can of tomato sauce. Return to oven for 15 minutes or until bacon is done.
