Chicken in a Biskit Ranch Crackers


This recipe came about when I couldn't find the oyster crackers I usually use. My Dad likes to use captain's wafers, but the store was out of them too. I grabbed a box of Chicken in a Biskit Crackers. I figured what the heck. I'll try it. Well, the hubby was impressed. He wants them made like this from now on! I've made them twice this past weekend. They are that good! 



Chicken in a Biskit Crackers 7.5 oz box
1/4 cup oil
1 package Ranch Dip Mix*
1/4 tsp dill weed

Mix ingredients in a plastic container with an airtight lid. Shake crackers and flip container every 10 minutes or so. I make these a day ahead for the oil and flavors to set. No baking necessary, and they are still crunchy! 

*I use the big shaker bottle of ranch mix. 3 tablespoons for this recipe. You can use more for your taste. (or less) We like them coated well.

French Onion Soup with Meatballs

 

French Onion Soup with Meatballs

1 package cooked, frozen meatballs (about 28 per pack)
2 large yellow onions, sliced
6 Tablespoons butter
1/2 cup white wine
4-5 cloves garlic, minced
2 1/2 cups beef stock
1/4 cup heavy cream (optional)*
4 pieces of 5 Cheese Garlic Texas Toast, toasted and halved

In a large skillet, melt the butter and add onions on med-high and cook 10 mins.


Slowly add the wine a little at the time, letting it cook into the onions.
Cook another 20 mins until caramelized.
Add the garlic, salt/pepper to taste and cook 3-4 mins.
Add broth and reduce to a low boil.


Add meatballs and cook 10 mins.
Drizzle in the cream and stir.
Place toast slices on a baking sheet and toast at 450 6-8 mins.

Serve meatballs and sauce in a bowl and add toast points. Enjoy! 

*I like my soup a little creamy rather than all broth. The cream smooths it out just right.

Banana Pepper Poppers

My garden is a champ at producing peppers. I wanted to try something different with them other than pickling and candying them. We aren't that big on heat, so we have a lot of banana peppers. I decided to turn them into poppers using the filling from my VooDoo Eggrolls! They turned out delicious!!!




Banana Pepper Poppers

12 Banana Peppers, halved and seeded
1 1/2 cups Crawfish Tails, chopped or shrimp*
2 tsp Old Bay Seasoning
1 tsp Butter
1/4 cup Onion, minced
3 cloves Garlic, minced
3/4 cup Andouille Sausage, cut in a small dice
4 tbsp Worcestershire Sauce
1 1/2 cups Shredded Mozzarella Cheese
1 cup corn
1/2 block of Cream Cheese (4 oz, room temp)

Preheat oven to 400 degrees F.

In a large bowl, add crawfish and seasonings.

In a skillet, sauté onions and garlic in butter and Worcestershire sauce,
until tender. Add crawfish and sausage. Sauté for 2-3 minutes.
Dump back into the large bowl to cool.

Stuffed Banana Pepper Poppers

Mix cheeses and corn until well mixed. Add to the cooled meat mixture.
Stuff peppers with the mixture and bake for 18 to 20 minutes. Let cool a little, about 5 minutes and enjoy!


*If you don't have access to crawfish, substitute shrimp. I used a combo of both in this recipe.

Potato Volcanos!

I bought a large (64 serving) container of dehydrated potato flakes or pearls as we call them. I divided them into serving portions, and vacuum sealed them. I was thinking of different ways to use them rather than just mashed potatoes. I came up with this and decided to call them volcanos instead of just cups. That way the kids would love to make and eat them! Even the big kids loved them! 



Potato Volcanos!

Potato Cups:
1 cup potato flakes
1 cup milk
1/2 cup water
1 tbsp butter

Sauce:
1 lb hamburger
1 onion, chopped
2 cloves garlic, minced
15 oz tomato sauce
1 tbsp Worcestershire sauce
1/4 tsp basil
Salt and Pepper to taste

Cheeses:
1 cup mozzarella
1 cup Colby Jack

Mix the ingredients for the potato cups and microwave for 2 minutes. Form into balls and place them on a parchment lined cookie sheet or silpat liner. Using a small cup or the end of a wooded spoon, make a well in the center of each potato ball. 


Cook the hamburger in a saucepan with onion and garlic. Drain and return to pan. Add the rest of the sauce ingredients and simmer for 5 minutes. Set aside.



Add mozzarella to each potato cup. (I didn't get a picture of that step, but you get it.) Top with sauce filling to the top and a little extra to mound it up. Carefully top each cup with Colby Jack. 

The cheese can ooze over,
that helps with the volcano effect!

Velveeta Sausage Dip

 I have to have this dip at every get-together, party or event. It's the kids' favorite! This is a big batch that can be cut in half, but it never lasts. If I have any left over at all, someone wants to take it home! 



2 pounds Velveeta (cut into 1/2-inch cubes)
1 (14.5 ounce) can Diced Tomatoes and Green Chilies (undrained)
1 pound Pork Sausage (cooked, drained) *

1. Mix Velveeta, Ro-Tel, and cooked pork sausage together in a crock pot/slow cooker. Set on low and let the dip heat up, stirring occasionally. 

*If using medium heat sausage, you can use diced tomatoes instead of tomatoes and chilies. (unless you like the extra heat)

Bacon Cheddar Ranch Pinwheels




 Bacon Cheddar Ranch Pinwheels

1 sheet Puff Pastry
1 package (8 oz) cream cheese, softened
1 cup shredded Cheddar cheese 
6 slices chopped cooked bacon 
1 tablespoon ranch seasoning mix
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon pepper
1/4 teaspoon salt

Egg Wash:
1 egg
1 tablespoon water

Preheat oven to 400 degrees.

In large bowl, beat all ingredients except pastry with electric mixer on medium speed until well mixed.

Unfold puff pastry and smooth out. spread the filling evenly over the pastry. Roll in jelly roll form. Refrigerate until firm.

Slice and place on a parchment lined cookie sheet. Brush with the egg wash. Bake at 400 degrees for 15 minutes or until golden brown and the pastry is cooked through.

Homemade Pretzel Bites

I was looking for some easy recipes for baked goods. I've always said that I'm not a baker. I do bake, but it's not my specialty. I ran across a recipe for pretzel bites from King Arthur Flour. The instructions seemed a little daunting, but they are really easy when you understand the steps. I wasn't aware that boiling the dough for about 30 seconds was the way they achieve their golden-brown color. I really had fun with this recipe. It's easy and really a quick recipe!  Pretty good for my first time, I think.

I love pretzels!

 The dough came together quickly
and needed no adjustments.

I let the dough rest for 30 minutes,
while I prepared the water bath. 
I had to work quick with the boiling water process,
so I didn't get a picture.

Sprinkled with Kosher Salt and then
baked at 400 degrees for 18 minutes.

 They are crunchy on the outside,
and soft on the inside. Delicious!

Pretzel Bites

Dough:
3 cups All-Purpose Flour
1 tablespoon sugar
1 tablespoon soft unsalted butter
1 teaspoon salt
2 teaspoons instant yeast
1 cup water

Water Bath:
1 1/2 to 2 quarts water
1 tablespoon salt
1/4 cup baking soda

Preheat the oven to 400°F. Lightly grease (or line with parchment) a large baking sheet.

Mix and knead the dough ingredients together. Cover the dough and let it rest for 30 minutes.

In the meantime, prepare the water bath. Combine the water, salt, and baking soda in a saucepan. The water should fill the pan at least 1 1/4" deep.

Punch down the dough on a lightly greased work surface, then divide it into 24 pieces. Cover and bring water bath to a boil.

Drop the pretzel bites, about six at a time, into the water bath. Cook for 30 seconds, then return them to the baking sheet using a slotted spoon or spider, and sprinkle with salt.

Bake the pretzel bites for 18 to 22 minutes, until they're a deep golden brown. Remove the pretzel bites from the oven, and serve with your favorite mustard, honey mustard or cheese sauce.

Cucumber and Radish Appetizers ~ Two Ways


This passed weekend was our Annual Adult Easter Egg Hunt Party, and the food was always a hit. We did an informal hamburger and hot dog spread, but had a little of the fancy-shmancy stuff too. There was potato salad, slaw and deviled eggs to name a few of the sides, but the appetizers were a hit. Here are the recipes for the Cucumber ~ Radish Bites.

Herbed Cream Cheese Cucumber and Radish Appetizers
(on the long tray)

4 oz cream cheese, softened
2 tablespoons mayonaise
1/2 teaspoon dill weed
2 teaspoons ranch dressing mix
1/2 teaspoon finely grated fresh lemon zest
1/8 teaspoon table salt
Pinch of cayenne, or to taste
1-2 medium pickling cucumber
3 medium radishes
1 teaspoons minced fresh basil

and Kosher salt for sprinkling

Stir together cream cheese, herbs, zest, lemon juice, table salt, and cayenne.
Slice 32 (1/8-inch-thick) rounds from cucumber with a mandolin. Trim bottoms from radishes, then slice into 32 (1/16-inch-thick) rounds with a mandolin. Top each cucumber slice with 1/2 teaspoon herbed cream cheese and top with a radish slice. Sprinkle with coarse sea salt and basil serve immediately.




Pimento Cheese Cucumber and Radish Appetizers
(on the small plate)

1 lb Extra Sharp Cheddar Cheese, grated
1 8oz package Cream Cheese, softened
1 cup diced Pimento
1 cup Mayonnaise
2 tablespoons onion, grated
1 teaspoon garlic powder
Salt and Cayenne Pepper, to taste

Combine all the ingredients, mixing well. Refrigerate 2 to 3 hours for flavors to mix.
Prepare the cucumbers and radishes as in the recipe above, but use my pimento cheese spread instead. (With this recipe, you will have a generous plenty of pimento cheese for sandwiches or as a dip for crackers.)

Sugar and Cinnamon Candied Pecans

These candied pecans remind me of Christmas! They smell awesome and taste delicious! Just a word of caution, they are addictive! We eat them by the handful!


½ cup sugar
¼ cup butter
¼ cup light corn syrup
½ tsp cinnamon
3 cups pecans



Whisk sugar and cinnamon together in a medium sauce pan. Bring sugar mixture, butter, and corn syrup to a boil. Place pecans in a grease 13X9 dish, pour sugar mixture over them and stir. Bake at 300 degrees for about 45 minutes, stirring every 15 minutes.

Red Velvet Swirled Bites

Remember me saying that I am not a baker???

Well, I was making some Red Velvet Swirled Bites. I had the batter all mixed up and turned around to see these... Good Grief!!!


Left out the eggs... time to remix.

Then, the cream cheese mixture wasn't blended well enough
and stopped up my pastry bag. I had to start all over AGAIN!

This looks better!!!

The finished product, finally!!!

Red Velvet Cake Mixture:

1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 teaspoons cocoa
3 tablespoons red food coloring
2 1/4 cups flour
1/2 teaspoon salt
1 cup buttermilk
1 teaspoon soda
1 tablespoon vinegar
1 teaspoon vanilla

Cream shortening and sugar. Add eggs. Mix well. Mix cocoa and food coloring in a cup. Add to eggs and sugar. Add vanilla. Sift flour and salt. Add, alternating with buttermilk. Add soda and vinegar. Let foam and FOLD into mixture. Spoon this mixture into a mini muffin tin, filling each cup about half way.

Cream Cheese Mixture:


8 oz cream cheese, softened
1/4 cup sugar
1 egg
1/4 tsp vanilla

Cream ingredients and place in a pastry bag or zip-type bag. Cut the corner of the bag, and place the tip into the center and squeeze in the filling until the cup is about 3/4 full. Take a toothpick and swirl the batter and cream cheese mixture to create a marbled effect. Bake at 350 degrees for about 15-20 minutes.

Gametime Snacks

 

Teriyaki Wings, Lemon Pepper Wings, Stuffed Mushrooms, Spicy Corn Dip, Sausage & Cheese Meatballs, Dilly Ranch Crackers and Chocolate Peanut Butter Cheeseball...

 From the other end of the table...

Teriyaki Wings

Teriyaki Sauce

1/3 cup soy sauce
1 cup water
1/4 tsp ginger
1/4 tsp garlic powder
1/3 cup packed brown sugar
1 tbsp honey
2 tbsp cornstarch
1/4 cup cold water

Mix all but the cornstarch and 1/4 cup of cold water, in a sauce pan over medium heat. Mix cornstarch and water. Stir til dissolved. Add to sauce pan. Heat until thickened. Toss wings in sauce and serve.

Lemon Pepper Wings

Lemon Pepper Sauce

1/2 cup butter or margarine
1 tsp lemon juice
1 tsp minced garlic
lemon pepper to taste

Combine ingredients in a sauce pan and simmer for a couple of minutes. Toss wings in sauce and serve.



I made Melissa's Melissa's Supreme Pizza Stuffed Mushrooms. Click here for her recipe. BTW... hers are much prettier than mine!!! ;-)



I made Amiee's Jalapeno Corn Dip. I didn't have the jalapenos so I added Cayenne Pepper instead. :-)



I changed these up a bit the usual recipe is...

Oyster Crackers (12oz bag)
1/4 cup oil
1 package Ranch Dip Mix
1/2 tsp garlic powder

I added 1/2 tsp lemon pepper for a kick!

To change this Chocolate Chip Cheeseball up, I added some peanut butter to the original recipe! I left out the vanilla because I had vanilla wafers to go with it.

Bacon Parmesan Puffs

These yummy little bites are so easy to make
and only take about 10 minutes from start to finish!



1/2 cup Mayonnaise
1/2 cup Parmesan Cheese
1/4 cup Cheddar Cheese
1/4 cup Bacon Pieces
1/2 t dried Basil
4 slices Bread

Mix mayonnaise, Parmesan, cheddar, bacon and basil in a large bowl. Cut rounds out of the bread with a small cookie cutter. Toast on one side under the broiler. Remove from oven. (You can do this step ahead of time and freeze in zip loc freezer bags.) Using a small scoop (cookie size scoop) place one scoop of cheese mixture on the un-toasted side of each round. Place under the broiler for 3-4 minutes or until golden brown. Serve immediately.

Homemade Mini Corn Dogs




Mama used to make these when I was little. She used to make some with the cocktail wieners or cut the hot dogs into chunks and made little bite size corn dogs. Notice Mama's note at the bottom. She wrote many notes for me on all her recipes... valuable info there! :-)



1 package Hot Dogs *
2/3 cup self-rising Corn Meal 
1 cup self-rising Flour 
2 T sugar 
2 T Wesson Oil 
1 Egg, beaten 
¾ cup Milk 
Oil for frying

Mix dry ingredients, add milk and oil. Dip wieners into mixture. Coat well and drop into hot oil until golden brown. 

*Mama's Note: Use the cocktail wieners… use a toothpick and a fork to drop them in the oil. They’re great for parties or kid’s snacks or sleepovers…

Elliott's Favorite Bean Dip



A while back, all the kids came over, and I was looking for something for them to munch on late in the afternoon. I didn't have much in the pantry. I spied a can of refried beans, and I figured I could scrap together some kind of bean dip and chips... Well, they loved it, and since then my son Elliott has been begging me to make it again. Only problem is, I didn't write it down and can't remember what I put in it. So, yesterday I fiddled around with it and finally made the dip that he requested (while jumping up and down in my kitchen, yelling, "Please! Please! Please! Make that dip I like!!!") LOL
Here's what I came up with...


1 can refried beans (or Bush's Chili Beans, drained and mashed)
4 oz cream cheese, softened
1/4 sour cream
1 envelope taco seasoning mix
2 T Taco sauce
8 oz Sharp Cheddar Cheese, shredded

1 bag Tortilla chips, Corn Chips or crackers

In a large bowl, mix beans, cream cheese, sour cream, seasoning and taco sauce until well blended, then stir in cheese. Pour into a casserole dish that has been lightly sprayed with cooking pray. Bake at 350 until bubbly and cheese is melted. Or spoon into individual serving bowls and microwave 30 seconds at a time, stirring each time until warm and bubbly. Garnish with tomatoes, avocado, green onions and black olives if you like... Serve immediately.

Ranch Pickle Chip Crackers

I tried making the Ranch Pickle Chip Crackers from Zestuous today... I ran into a few problems. I had no ranch mix (which I always keep on hand). I ran out of butter (no margarine either), and my son ate all the pickles (which I buy by the gallon, because he eats so many...every day!). Oh! I also had no bread crumbs or parm cheese... the kids ate the rest on pizza today! Sooooooooo! I used ranch bottled dressing, dill, a little shortening and pickle juice (I have plenty of that!)... I used crushed Tomato & Basil Wheat Thins and kosher salt to sprinkle on the top. End result: Ok! Not enough flavor, but pretty! I'm going to the store tomorrow and try them again!!! Sorry I screwed them up Zestuous! All those who know me will probably say... "That's why she doesn't bake!!!" LOL

Waikiki Muffins

Looking through more of Mama's boxes of recipes, I found these... They are yummy!

1 cup crushed Pineapple
1 (14oz) Orange Muffin Mix
2/3 cup milk
1 beaten egg
~ ~ ~
4 T butter, melted
1/4 cup pecans, finely chopped
1/4 cup coconut, toasted
1 (3oz) cream cheese, softened

Preheat oven to 400 degrees. Drain pineapple, thoroughly and reserve liquid. Combine muffin mix, drained pineapple milk and egg. Stir just until dry ingredients are moistened. Fill greased muffin pans 2/3 full. Bake for 15 - 20 minutes or until golden brown. Combine pecans and coconut in a small dish. Dip tops of warm  muffins in melted butter and then in pecan and coconut mixture. Beat cream cheese with 1 T of reserve pineapple juice until fluffy. Serve with warm muffins.

Southern Banana Pudding Shots

These are soooo cool!!! And the perfect size for a one-bite finger food party, shower or reception. You can also make an adult version using a banana rum or liqueur. You can take some shortcuts with pudding instead of custard if you like, but the custard is worth the work!

VANILLA CUSTARD:

2 cups half-and-half
3 tablespoons corn starch
2 eggs
1/2 cup granulated sugar
2 vanilla beans, split
3 tablespoons butter
3/4 teaspoon pure vanilla extract

WHIPPED CREAM:

3/4 cup heavy cream
3 tablespoons confectioners' sugar

SHOOTERS:

1 package vanilla wafer cookies (about 30), crushed
1 banana, chopped

For the vanilla custard: 
Whisk 1/2 cup half-and-half with the corn starch in a heat proof medium bowl until smooth. Whisk in the eggs and set aside.

In a heavy, medium saucepan, heat the remaining 1 1/2 cups half-and-half, the granulated sugar and vanilla beans over medium-low heat until a thin skin forms on the top, about 8 minutes.

Slowly whisk the hot half-and-half mixture into the egg mixture to temper it. Return the mixture to the saucepan and cook, stirring constantly until it is just thick enough to coat the back of a wooden spoon, about 10 minutes. Remove from the heat and add the butter, 1 tablespoon at a time, stirring until combined. Stir in the vanilla extract.

Pour the custard into a clean bowl and press plastic wrap directly on the surface to prevent a skin from forming. Refrigerate for at least 4 hours, or overnight.

For the whipped cream: 
Beat the heavy cream and the confectioners' sugar in a medium bowl until soft peaks form.

For the shooters: 
Put 1 teaspoon wafer cookies in the bottom of each shot glass. Top with  a few pieces of chopped banana. Top with 1 teaspoon custard. Add a dollop of whipped cream and garnish with crushed cookies or chopped banana. Serve cold.

For an extra treat and a fancier presentation, serve shots in milk chocolate cups... No glasses to wash!

Garlic Parmesan Popcorn


It's National Popcorn Day! So, I had to share this yummy snack recipe! Enjoy!!!



3 tablespoons butter
2 cloves garlic, minced
2 tablespoons vegetable oil
1 cup unpopped popcorn**
1/2 cup finely grated Parmesan
1/2 teaspoon cayenne pepper
Salt


In a small saucepan over medium heat, melt butter. Add garlic and saute 1 minute, stirring, then remove saucepan from heat and set aside to cool slightly. Be sure not to let the garlic burn.

Warm vegetable oil in a large, deep pot with a tight-fitting lid over high heat. When oil is hot, add unpopped popcorn, cover pot, and cook 1 minute. Vigorously slide pot back and forth over the stove until popcorn begins to pop. Continue shaking pot over the stove until popping stops, about 4 minutes. Remove pot from heat and transfer popcorn to large serving bowl.

Pour butter-garlic mixture over popcorn, sprinkle with Parmesan and cayenne and gently toss. Season with salt and serve.

**If you are gun-shy about popping your own popcorn on the stove, you can use microwave popcorn. Follow package directions and pour butter and seasonings over the popcorn while hot.

Bacon Cheddar Bites

Here's another quick and easy, but very tasty treat!

1 lb Bacon, cooked and crumbled
1 lb Sharp Cheddar Cheese, grated
1 Onion, chopped
Mayonnaise
1/4 t Garlic Powder
1/2 t Black Pepper
Rye Bread Party Loaf or French Loaf

Combine bacon, cheese, onion, seasonings and enough mayo just to bind the mixture together. Spread on party rye slices and put under the broiler about 2 - 3 minutes or until cheese melts. Makes about 3 dozen.
