Putting up a Bushel of Fresh Corn from Dorr Farms!

Thanks to Dorr Farms for the bushel of corn! I spent most of the day today cutting up a watermelon from them and then processing and vacuuming sealing 51 ears of corn! 

 1 bushel = 50 ears or so.

Cornbread Pudding

 

Cornbread Pudding

I wanted some cornbread pudding, but I didn't have exactly what the recipe called for. I came up with a second version, and it's even better than the first! Yay!


1 can Corn, drained
1 Onion, chopped
2 Eggs
1 cup Heavy Cream
1/2 stick Butter, melted
1 package Jiffy Cornbread Mix

1/2 tsp Garlic Powder
Salt and Pepper to taste


In a large bowl, combine the first five ingredients. Stir in cornbread mix and seasonings. Pour into a greased 13X9 baking dish.

Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted near the center comes out clean. Serve warm.

The Ultimate Shepherd's Pie




2 tablespoons olive oil 1 cup chopped yellow onion ½ cup chopped carrots 1 lb lean ground beef 1/2 teaspoon salt 1/2 teaspoon ground black pepper 1 tablespoon Worcestershire sauce 2 teaspoons garlic minced 2 tablespoons all purpose flour 2 tablespoons tomato paste 2/3 cup beef broth 1/2 cup peas 1/2 cup corn

Prepared Mashed Potatoes (I use Idaho dehydrated flakes as a shortcut.) 

2 cups shredded Colby Jack Cheese(or your favorite)



Preheat oven to 400 degrees F.

Heat oil to a large skillet over medium-high heat. Add the onions and carrots. Cook for 5 minutes, stirring occasionally.


Add the ground beef (or ground lamb) to the skillet and break it apart with a wooden spoon. Add salt and pepper. Stir well. Cook for 6-8 minutes, until the meat is browned, stirring occasionally. Drain all but 2 tablespoons of oil/ pan drippings.


Add the Worcestershire sauce and garlic. Stir to combine. Cook for 1 minute. Add the flour and tomato paste. Stir until well incorporated. Add the broth, peas and corn. Bring the liquid to a boil then reduce to simmer. Simmer for 5 minutes, stirring occasionally. If the mixture is too dry, add a little beef broth to your desired thickness. Set the meat mixture aside. 


Pour the meat mixture into a 9x9 (or 7x11) inch baking dish. Top meat mixture with mashed potatoes. Add cheese on top. Bake uncovered for 25-30 minutes.

Southern Cornbread Salad

This is a great way to use that leftover cornbread, if you have any. I know it sounds and looks strange, but trust me, it is delicious! Everyone that has tried it has asked for the recipe!



Prepared 8x8 pan of Cornbread (I use 1 Jiffy mix, 1 egg and 1/3 cup milk)
1 package Hidden Valley Ranch dip mix
2 cups Sour Cream (or 1 1/2 cups Sour Cream and 1/2 cup Mayonnaise)
1 - 16 oz diced Tomatoes, drained
1 - 16 oz Black Beans, drained
1 - 16 oz Corn, drained
1/4 cup Bacon crumbles
1 cup Cheddar Cheese

(optional) ½ cup each Green Onions, Red Bell Pepper, Green Bell Pepper

Make Cornbread, and cool completely. Stir together HVR dressing mix, sour cream and mayo. Crumble cornbread into a 9X13 casserole dish. Top with beans, tomatoes, (optional onion and peppers), corn, bacon and cheese. Finally top with dressing. Cover and chill at least 3 hrs. When it is time to serve, take a spoon and stir a little section at a time to mix the ingredients to get a nice moist salad.

* I use twice as much dressing for mine, so it's not too dry.

Jamie's Vegetable Soup


My D-I-L, Jamie brought me some of her soup to try when they came over for our family Christmas Saturday. Thank goodness, because I don't feel that great, and this really hit the spot. I just added some left over turkey from Saturday. That made it supper for the hubby... he has to have meat, or it's just a side dish! LOL

5-6 Red Potatoes, cubed
1 can or 1 cup fresh Carrots
1 cup Celery, sliced
1 can Sweet Peas
1 can Corn 
1 can Green Beans
1 can Tomatoes, crushed or diced
1 Onion, chopped
2 (8oz) cans of chicken stock
one packet of Italian dressing mix
2 cups water
1 tsp tomato paste
Salt and Pepper, to taste*

Saute onion and celery in pot with a little oil or butter until onions are translucent. Add chicken stock, dressing mix, salt and pepper, and water. Bring to a boil then turn down to med~high heat for a simmer for 30 minutes. Then add green beans, corn, sliced carrots, (or cup of fresh carrots), potato, peas, tomato and tomato paste. Let simmer for another 30 minutes or until the potatoes have cooked through. Then enjoy!!! I like to eat it with saltines or a good homemade sweet bread.

*I added a little garlic powder, because everything I eat seems to have some garlic in it! LOL That's not everyone's cup of tea!

Skillet Fried Corn with Bacon

I have the most wonderful BFFF (Best Foodie Friend Forever!) Mary at All Things Food - Cooking with Mary and Friends did a "foodie drive-by" at my house Monday morning! Bi-Color Corn is on the menu for tonight! Yay!!! I've had some before that Mary got from the Kershaw County Farmer's Market, so I know it is awesome corn! Thanks Mary!


I used The Southern Lady Cooks Skillet Fried Corn recipe as a guide last night with my bi-color fresh! I added some garlic, added the bacon back to the corn and left out the sugar, because this variety is very sweet, and OMGoodness! It's like food crack!!! My husband and I could not stay out of the pan! Luckily, my son ate before he came home! LOL Definitely a keeper!!!

Oven Roasted Corn on the Cob

I don't know what it is about the taste of fresh corn... on the cob! There is nothing like it! I've never grilled or roasted corn. Our grill is on the fritz again, so I decided to try oven roasting some. I left mine in a little too long so watch yours closely. 20 - 25 minutes should be plenty of time. 

4 cobs of fresh corn
1/2 stick of butter
1/4 tsp
 of you favorite seasonings per ear ( I used garlic powder, onion powder and basil)
salt and pepper
Parmesan Cheese (optional)

Preheat oven to 400 °F.


Remove husks and silk from corn and rinse off. Place ears on foil sheets, dot with pats of butter, and sprinkle with seasoning, salt and pepper (and cheese if you want). 


Bake for 25 minutes, or until soft and steaming.

Voodoo Egg Rolls

I saw a picture of Voodoo Egg Rolls for the first time the other day on Serving Houma's Facebook Page. They offer an amazing service. For restaurants in their area that don't deliver, they'll order for you, go pick it up and deliver it to you! What a wonderful service especially for those house bound individuals! Anyway, I contacted them and told them that I wasn't asking for a recipe, because I knew that only delivered, but could they describe the rolls to me. Their picture looked so good, and they were very nice to describe them for me. To me, they sounded like a Louisiana version of the lobster rolls that Red Lobster used to sell... just kicked up with some good andouille sausage! I had worked for a long time to try and replicate the Lobster Rolls, so I figured I'd try my hand at these Voodoo Egg Rolls! I'm not sure if these taste anything like the ones in Houma, La, but they were VERY good!!! The hubby gave them a thumbs up... because his mouth was too full to talk! LOL




Voodoo Egg Rolls

1 1/2 cups Crawfish Tails, chopped or shrimp
2 tsp Old Bay Seasoning
1 tsp Butter
1/4 cup Onion, minced
3 cloves Garlic, minced
3/4 cup Andouille Sausage, cut in a small dice
4 tbsp Worcestershire Sauce
1 1/2 cups Shredded Mozzarella Cheese
1 cup corn
1/2 block of Cream Cheese (4 oz, room temp)
12 Egg Roll Wrappers



In a large bowl, add crawfish and seasonings.

I didn't have the crawfish this time, so I substituted shrimp.
I'll try the crawfish next time!




In a skillet, saute onions and garlic in butter and Worcestershire 

sauce, 
until tender. Add crawfish and sausage.

Saute for 2-3 minutes.
Dump back into the large bowl to cool.


Mix cheeses and corn until well mixed.
Add to the cooled meat mixture.

Put an egg roll wrapper on a dry surface.
Place 2 tablespoons or so of the filling mixture
in the middle of the wrapper.

Fold the top down...

 Tuck the bottom in a little and fold over the sides...


 Fold in the other side... Notice the small white bowl?
It has water in it...


Wet the top edge with a water on your fingertip
and roll toward the end. The water will seal the edges.

 Press to seal.

 Fry rolls at 375 degrees until golden, about 2 minutes.

Cornbread Pudding

After my hubby's Grandmother passed away, two different churches in the family brought food over to her house which is a tradition in the South. One of the dishes that was most talked about was the Cornbread Pudding. My daughter-in-law asked me about it, and asked if I could get her the recipe. I decided it was the perfect recipe to share here! It is an awesome casserole!




Cornbread Pudding

2 eggs
1 cup sour cream
1 can whole kernel corn, drained
1 can cream-style corn
1 stick of butter, melted
1 package Jiffy cornbread mix
Salt and Pepper, to taste

In a large bowl, combine the first five ingredients. Stir in cornbread mix and seasonings. Pour into a greased 13X9 baking dish.
Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted near the center. Serve warm.

Corn Chowder

I received a request for my corn chowder recipe after I posted a lot of pictures and videos of our trip to Old McCaskill's Farm. We joined in the fun at the Grits Mill, shelling/shucking corn. The kids had a blast! So, as requested... here's my recipe.



Corn Chowder

1/2 cup diced bacon
1 cup diced sweet onion
1/2 cup carrots, sliced
1/2 cup celery, sliced
1 tablespoon flour
4 potatoes, peeled and cubed
4 cups chicken broth
3 cups corn
1 1/2 cups half-and-half, or heavy cream... your choice
1/4 teaspoon basil
1 teaspoon fine kosher salt
1/2 teaspoon black pepper

Cook bacon in a large pot until crisp, about 5 minutes. Transfer to paper towels to drain. Add onion, carrots and celery to bacon fat and cook, stirring, until onion is softened. Stir in flour until well incorporated. Pour in the broth a little at a time, stirring until smooth. Add potatoes and corn. Simmer, covered, until potatoes are just tender, about 20 minutes. Add cream and simmer, uncovered, 10 minutes. Return bacon to the pot and stir. Season with basil, salt and pepper.

Gametime Snacks

 

Teriyaki Wings, Lemon Pepper Wings, Stuffed Mushrooms, Spicy Corn Dip, Sausage & Cheese Meatballs, Dilly Ranch Crackers and Chocolate Peanut Butter Cheeseball...

 From the other end of the table...

Teriyaki Wings

Teriyaki Sauce

1/3 cup soy sauce
1 cup water
1/4 tsp ginger
1/4 tsp garlic powder
1/3 cup packed brown sugar
1 tbsp honey
2 tbsp cornstarch
1/4 cup cold water

Mix all but the cornstarch and 1/4 cup of cold water, in a sauce pan over medium heat. Mix cornstarch and water. Stir til dissolved. Add to sauce pan. Heat until thickened. Toss wings in sauce and serve.

Lemon Pepper Wings

Lemon Pepper Sauce

1/2 cup butter or margarine
1 tsp lemon juice
1 tsp minced garlic
lemon pepper to taste

Combine ingredients in a sauce pan and simmer for a couple of minutes. Toss wings in sauce and serve.

I made Amiee's Jalapeno Corn Dip. I didn't have the jalapenos so I added Cayenne Pepper instead. :-)



I changed these up a bit the usual recipe is...

Oyster Crackers (12oz bag)
1/4 cup oil
1 package Ranch Dip Mix
1/2 tsp garlic powder

I added 1/2 tsp lemon pepper for a kick!

Mix ingredients in a plastic container with an air tight lid.  Shake crackers and flip container every 10 minutes or so. I make these a day ahead for the oil and flavors to set.



To change this Chocolate Chip Cheeseball up, I added some peanut butter to the original recipe! I left out the vanilla because I had vanilla wafers to go with it.

Seven Layer Pasta Salad

This salad has the taste of Mama's 7 Layer Salad topping... the part with the peas, bacon, mayo and Parmesan Cheese. It's very easy and tastes wonderful.



4 cups cooked elbow macaroni
1 can young sweet peas
1 small can yellow corn
3/4 cup mayonnaise
1/4 cup sour cream
2 tablespoons bacon pieces
1/2 cup shredded Parmesan cheese
Salt, pepper and basil (to taste)

Toss ingredients together until mixed well. Cover and refrigerate or serve immediately.

Easy Corn Pudding

This is another recipe that Mama gave me. It was one of my Grandmother Elliott's favorites. If you have some corn-on-the-cob left over or if you just have canned... this recipe is wonderful. It's buttery, creamy and ever so slightly sweet!


Corn Pudding is a very easy recipe. If you have a problem with 'weeping' or watery puddings, pan fry or saute the corn in some butter until all the liquid is cooked off. This should give the pudding a better consistency.

2 cups Corn
2 t Sugar
1 ½ t Salt
1/8 t Pepper
3 Eggs, beaten
2 T Melted Butter
2 cups Milk

Combine corn, sugar, salt and pepper. Add eggs, butter and milk. Mix well. Pour into baking dish. Bake at 325 for 45 to 60 minutes or until knife comes out clean.

Either way, this is good stuff!!!

Chicken Pot Pie


I have had several requests for the recipe for the chicken pot pie I served last night at PBC. I have two other chicken pot pie recipes, but none using a biscuit topping. Enjoy!


4-6 chicken breast halves*
Seasoned salt and pepper
2 tbsp oil
1 cream mushroom soup
1 cream chicken soup
1 tsp minced garlic
1 small yellow onion, chopped
1 1/2 cups cubed cooked potatoes
1 cup frozen green peas
1 cup frozen corn
1 cup chopped cooked carrots
Salt & black pepper, to taste
1 can buttermilk or home-style biscuits**

Preheat oven to 350 degrees F.

Season chicken with seasoned salt and pepper. Heat oil in a large skillet over medium-high heat. Add chicken and saute until cooked through. Remove from heat and cut into chunks. In a large pan over medium heat, cook soups, garlic, and onion and stir. Add peas, carrots, salt and pepper and cut up chicken until bubbly. Fill 4 individual oven-proof bowls or one 13x9 casserole dish with chicken mixture. pull biscuits apart (peel layers in half) and then top each pie with biscuits. Bake for 15 minutes or until golden brown.

* For another short-cut... Use a rotisserie chicken from your grocer and pull the meat off into pieces and use instead of the chicken breasts.

** You can use any of your favorite biscuits for this recipe whether they are frozen, canned or homemade. Just make sure if you use frozen, set them out for a little while to thaw. If you put them on while frozen the bottoms of the biscuits may not cook enough.

Beaufort Stew or Frogmore Stew?


A while back, I was asked if I had any Gullah Recipes. If you don't know what Gullah is, it's an African-American culture that took root soon after the days of slavery. The Gullah settled mainly in the islands along the shores of South Carolina and Georgia, among them: Edisto Island, Coosaw Island, Daufuskie Island, and St. Helena Island. This gave them privacy to preserve their culture and customs; like basket weaving, cultivating rice, trapping and trading especially shrimp.

When I worked for a trucking company in the '90s, I had a driver that was from the islands around Edisto. His 'handle' on the radio was 'Geechee'. This is a word to describe the Gullah dialect, also a word to descibe perfectly how he talked.

On the island of St. Helena, where my Mama began a yearly pilgrimage many years ago, you can find the Gullah settlement of Frogmore. It is a simple crossroads with a two-story white country store on one side and a post office on the other. This is the birthplace of Frogmore stew, a boil of assorted seafood, pork sausage, and corn on the cob. My family in Rimini, SC, has always called this a Beaufort Stew. There is the Louisiana Crawfish Boil and the Lowcountry Boil. The names go on forever, and the fight for the origin of each name does also. I believe that when you get to the 'outer banks' or islands of any southern state, if you look hard and deep enough, you will find the deep hidden cultures of time gone past.

Here is my families way of doing this classic Gullah inspired dish!

•2 crab boil seasoning bags (or more to taste)
•several lemons, halved (optional)
•redskin potatoes (depending on size, 3 or more per person)
•spicy smoked sausage, cut into 1-inch slices (¼ pound per person)
•fresh corn, broken into halves (1 ½ ears per person)
•sweet onions, whole (depending on size, 1 or more per person)
•shrimp (½ pound per person)
•crawfish (½ pound per person) If Elliott's Landing has any left, they go fast!

This is usually done outside over an intense heat such as a propane burner. That's the only way to cook this much food all together! Fill a large steamer pot halfway with water. Add crab-boil seasoning. Add halved lemons. When the seasoned water comes to a boil, add redskin potatoes and onions and boil for 20 minutes; then add 2" slices of spicy smoked sausage and boil for 5-10 minutes. Add the corn and boil another 5 minutes. Then add the shrimp. Cook for 3 minutes. (Don't wait for it to boil again or you will overcook the shrimp.) Drain, and pile on a table.
Serve with lots of paper towels and icy beverages, plus melted butter for the corn, cocktail sauce for the shrimp, and sour cream for the potatoes. ALSO VERY IMPORTANT: Make sure to have a bottle of killer hot sauce for the cousin who's gonna say, "Aw that ain't nothin'!" Then pour it to 'em!!!
