Chinese Takeout at home!

I had a craving for Chinese Takeout. I've made all these dishes separately, but I hadn't made them all at one time. So, I took on the task of all three at one time. SCORE!!! It was awesome, and no leftovers!

Egg Rolls (click here for the recipe)

These egg rolls are really pretty easy to do! I think the part about egg rolls that people think is intimidating is just the assembly... the rolling. It's more like folding them into an envelope shape. The most complicated part is rolling the wrappers and sealing them well, but that gets easy after you do it a couple of times! Don't work on the stack of wrappers while filling and rolling. Assemble each one separately to keep them from getting wet and sticking together. Keep your work space dry and neat. If you lay a wrapper down in water, the water turns to glue. The wrapper will tear when you try to pick it up or fold it. Give it a try! If you have kids, let them try too! It's a fun activity for everyone. I think it would make a great kitchen party with all the guests learning how you roll! LOL

Beef and Broccoli with Cauliflower Rice (click here)

Beef and Broccoli served over rice with a substitution of cauliflower rice for those on the New Year's Resolution diets is the casserole of the week! Comfort food doesn't have to be fattening or loaded with carbs! Cauliflower is a great substitution for carb loaded vegetables and starches. It has a neutral taste that blends well with any flavors it is teamed. Try using it in place of rice or mashed potatoes!

Mama's Tempura Batter for Sweet and Sour Chicken (click here)

Mama's Notes and tips: “Great for shrimp, fish, onion rings, mushrooms, eggplant, even fried green tomatoes!”
Use cold water to prepare the batter. Chilled light beer or Club soda can be substituted. For best results keep the batter cold by placing the tempura batter on ice.

Mama's Red Sauce (click here)
I got this recipe from my Mama's recipe file and modified it a little. When I made it, I realized it tastes just like the Chinese Restaurant's Red Sauce! I had been trying to duplicate that sauce for years because that's the main reason the hubby eats Chinese Food! LOL Stumbling on to this recipe was a real find! Mama called this Hawaiian Sauce!

Egg Rolls

These egg rolls are really pretty easy to do! I think the part about egg rolls that people think is intimidating is just the assembly... the rolling. It's more like folding them into an envelope shape. The most complicated part is rolling the wrappers and sealing them well, but that gets easy after you do it a couple of times! Don't work on the stack of wrappers while filling and rolling. Assemble each one separately to keep them from getting wet and sticking together. Keep your work space dry and neat. It's a fun activity for everyone. I think it would make a great kitchen party with all the guests learning how you roll! LOL

Egg Rolls

Egg Roll Wrappers (about 16 -18 per package)
1/2 lb Sausage or Hamburger
1/2 lb Shrimp, shelled and cut
1/2 cup mushrooms, chopped
1/2 cup bamboo shoots, chopped
1/2 cup water chestnuts, chopped
1 cup cabbage, shredded
1 cup bean sprouts

Combine and set aside:
1 T soy sauce
1 T water
1 T corn starch

If you have a wok, that's great! If not, use a large skillet add a little oil and saute the meat and mushrooms for about 2 minutes. Add the shrimp and cook until the shrimp turns pink. Add the corn starch mixture and cook until the liquid thickens. Pour into a large bowl and set aside. In the same skillet, add a little oil and return to heat. Add cabbage, sprouts, water chestnuts, bamboo shoots and saute until cabbage wilts. Add to bowl with meat mixture and stir together. Let the mixture cool a little.

Take one egg roll wrapper out and place it on your work space facing you like a diamond. Place about 1/4 cup of filling in the lower corner nearest you. Brush or with your finger, wipe the edges down with water. This will seal the egg rolls so they don't pop while cooking. Fold the bottom corner up and the sides in, like an envelope. Then fold the top down to seal. Make sure each egg roll seals well. Place the egg roll on a parchment lined cookie sheet. Repeat the process with the next wrapper, until they are all rolled and sealed.

It's best to use a small fryer such as a "Fry Daddy" or some with fryer with a basket. The egg rolls can split and that can cause the filling to leak. This can make the oil foam up and pop sometimes, so use caution when frying. If you use a pot on the stove, use as little oil as you can and turn the egg rolls to cook evenly.
Heat the oil to 375 degrees. Fry two or three at a time until they are golden brown... usually about 3-5 minutes. Keep them in a warm oven until ready to eat. Serve them with soy sauce, duck sauce, plum sauce or a spicy mustard.

This recipe usually makes 16-18 egg rolls.

Voodoo Egg Rolls

I saw a picture of Voodoo Egg Rolls for the first time the other day on Serving Houma's Facebook Page. They offer an amazing service. For restaurants in their area that don't deliver, they'll order for you, go pick it up and deliver it to you! What a wonderful service especially for those house bound individuals! Anyway, I contacted them and told them that I wasn't asking for a recipe, because I knew that only delivered, but could they describe the rolls to me. Their picture looked so good, and they were very nice to describe them for me. To me, they sounded like a Louisiana version of the lobster rolls that Red Lobster used to sell... just kicked up with some good andouille sausage! I had worked for a long time to try and replicate the Lobster Rolls, so I figured I'd try my hand at these Voodoo Egg Rolls! I'm not sure if these taste anything like the ones in Houma, La, but they were VERY good!!! The hubby gave them a thumbs up... because his mouth was too full to talk! LOL

Voodoo Egg Rolls

1 1/2 cups Crawfish Tails, chopped or shrimp
2 tsp Old Bay Seasoning
1 tsp Butter
1/4 cup Onion, minced
3 cloves Garlic, minced
3/4 cup Andouille Sausage, cut in a small dice
4 tbsp Worcestershire Sauce
1 1/2 cups Shredded Mozzarella Cheese
1 cup corn
1/2 block of Cream Cheese (4 oz, room temp)
12 Egg Roll Wrappers

In a large bowl, add crawfish and seasonings.

I didn't have the crawfish this time, so I substituted shrimp.
I'll try the crawfish next time!

In a skillet, saute onions and garlic in butter and Worcestershire

sauce,
until tender. Add crawfish and sausage.

Saute for 2-3 minutes.
Dump back into the large bowl to cool.

Mix cheeses and corn until well mixed.
Add to the cooled meat mixture.

Put an egg roll wrapper on a dry surface.
Place 2 tablespoons or so of the filling mixture
in the middle of the wrapper.

Fold the top down...

Tuck the bottom in a little and fold over the sides...

Fold in the other side... Notice the small white bowl?
It has water in it...

Wet the top edge with a water on your fingertip
and roll toward the end. The water will seal the edges.

 Press to seal.

Fry rolls at 375 degrees until golden, about 2 minutes.

My plate...

The Hubby's plate!
