A Tribute to Michele Wynn Gerhard ~ La Belle Cuisine


Years ago, I fell into a friendship that began on Southern With A Twist over some recipes I had posted and comments that were made on my blog...
"Wow! You know I love this, Lynn! When I read about your Mama making biscuits, I could picture my grandmother doing the same thing! Her biscuits were heavenly! When I would try to duplicate her efforts, I would always fall short! She'd smile and say, "Well, you're probably not holding your mouth right..." As with biscuits, so with pie crust and any other "short" dough... it takes a very light touch. Looking forward to much more from you, Lynn!" Going Back To Your Culinary Roots
And thus a friendship was formed. We found out that we had so much in common. It seemed that the more I wrote, the more we connected.

What you wrote reminds me of a long-ago 4th of July weekend spent with dear friends who helped organize a progressive party around a lake near McComb MS. It started out with Bloody Marys and went from there... Actually, there was some great food, but everyone remembered and talked about the Bloody Marys and the bottomless Daiquiri glasses served by a Delta pilot at his cabin. Apparently he was just sneaking up behind folks refilling their glasses. Best daiquiris I've ever had! And of course, a couple of the guys just HAD to have a swim across the lake. I loved the stories that we shared and the things we had in common... so much in history and food!
"Lynn, this really takes me back! I'm drooling all over myself! Actually the kind of meal you describe takes me back to Oklahoma when my grandparents had a place on Grand Lake. No crabbing there, but tons of fish! And my Grandmother Dolly had a fantastic vegetable garden. Mercy, mercy, mercy... As for the oysters and crabs, we spent some time in Colonial Beach VA, which is right at the mouth of the Potomac..... little oysters fresh out of the water, the sweetest I've ever had! I think that her comment here is my favorite. I loved all her stories, but when she called me "Sistah!", I knew I was something special! 
"LOVE this, Sugah! Takes me straight back to long ago summers in Oklahoma with Grandmother Dolly and Granddaddy Mack! I still have vivid memories of watching her wring a chicken's neck, just the way you describe! And Granddaddy Mack cleaning squirrels and rabbits, and whatever else he might have brought home from the woods... We are soul sistahs fo' sho'! xoxoxoxo"
And a friendship bloomed, and we exchanged phone numbers. We had glorious talks on the phone! We rejoiced, complained, discussed, confided, cried, laughed and shared all manner of stories. I even sent her parts of my two books to review for me... In return, she sent me two cookbook, with a note attached...
"Read these! Look over them carefully! They are garbage! You are 100 times better than them!"
Michele was an awesome Mentor, Friend, Cook, Writer, Mother, Sistah and all around Woman! It was my PRIVILEGE to have known and loved her! I am a better person for having her in my life!


Oh how I'm gonna miss you my Sistah from another Mothah! I'll keep you in my heart Always and Forever! Until we meet again! XOXOXOXOXOXOXOXOX

Trish's Caramel Apple Dip


My cousin, my best friend Trish and I finally got a chance to spend some time together yesterday. As teenagers, we spent as much time together as possible. She lived about 1 1/2 hours away. My Mama used to drive me down to spend some time and usually bring Trish back with us for the weekend. At least once or twice a year, her entire family would come to our house for a big whole hog BBQ/Pig Pickin. 


When I got my driver's license, I used to drive down and pick her up. When she and her twin brother graduated high school, I attended the ceremony, and took her back to her house for the celebration. As a present for graduating, her Dad gave her a bottle of Slow Gin and her brother a bottle of Jack Daniels. That sounds odd, but her father was a very unique man to say the least. She spilled Slow Gin all over her dress in my car, and we had to stop at a gas station for her to change her clothes. I brought her home with me, and we had an awesome party with friends that weekend! I caught her and my ex (Bud) kissing. I started to throw my drink at her, but she held her hand up and screamed, "NO Lynn! I'm wearing your blazer!" Bwahahahahaha!!! We both busted out laughing! Good times! 

Well, she came up yesterday and brought her grands... three month old baby, Karah and three and a half year old Brantley! The hubby was having a blast! He played ball with Brantley and even got rocker time with Karah.


Trish made us a dessert dip that was so good. The hubby said that it is dangerous! Every time I turned around he was in it! LOL

Trish's Caramel Apple Dip

2 - 8oz pkgs of Cream Cheese, softened
12oz container Caramel Ice Cream Topping
12oz bag Milk Chocolate Chips
1/2 cup chopped nuts (she used pecans)
3 lb bag Granny Smith Apples

In an 8X8 dish, spread cream cheese. If needed, heat the caramel in the microwave just until pour-able. Pour over the cream cheese layer. Sprinkle on chocolate chips and nuts. Core the apples and cut into wedges. Use the apples to scoop up the dip. Dip, eat and repeat!

A Southern Belle's Rant... to Anonymous!


I've been agonizing over an email that I received this morning... from "Anonymous" no less!!! I'm compiling several blog posts that I have written on Southern Cooking and Soul Food. They all contain information on the history of Southern Cooking and Foods. The links are at the bottom of this post. That being said...

I am a Southern Belle with very strong ties to my Southern Roots. My Family History and Southern Heritage are a great source of pride for me. Southern Style Cuisine gets a bad rep from time to time... with Fat, Butter and Sugar being criticized at every turn. That's fine with me. You eat what you want, or don't eat what you don't want. Like it or don't like it. Love it or hate it... it's your call.

So, who peed in my corn flakes this morning??? "Anonymous", that's who. Someone not brave enough to leave their name... on my blog post about my baby brother's famous pizza... and I quote!!!

"Pizza is not southern but it shares a few major characteristics of typical southern fare: yummy but heart attack inducing. I feel fat after just looking at the pics."

#1... Knocking my baby brother's pizza is a BIG no no! If my Mama were still alive, she would find you Anonymous! BTW... I have the same knee-jerk reaction, since I took care of him after she died.

#2... If I told my baby brother that someone left a note on his lit'l Sis' blog insinuating that our food isn't southern, he'd be in his pick-up blaring Hank Jr's "Country Boy Can Survive!" demanding, "Take it back!"
(at the least... that's what he'd do.)



#3... My daughter-in-law, that had her wedding portraits taken in her breathtaking wedding gown, camo hat and rifle... would demand, "Take it Back!"


#4... My Mama was Southern. My Daddy is Southern. My Grandparents were Southern. My son is Southern. I am Southern. My kitchen is Southern. The food that comes out of my kitchen is Southern. Getting the picture?

#5... I am NOT saying that a Southerner created the pizza. If you are a Northerner, and think New Yorkers created the pizza... NOPE. If you think that the Italians created the pizza, NOPE, wrong again. The Italians are the first recorded to have used the WORD "pizza". Foods similar to pizza have been prepared since the neolithic age also know as the Stone Age, beginning about 10,200 BC. Records of people adding other ingredients to bread to make it more flavorful can be found throughout ancient history. For more info on the history of the pizza... Click Here!

Gametime Snacks

 

Teriyaki Wings, Lemon Pepper Wings, Stuffed Mushrooms, Spicy Corn Dip, Sausage & Cheese Meatballs, Dilly Ranch Crackers and Chocolate Peanut Butter Cheeseball...

 From the other end of the table...

Teriyaki Wings

Teriyaki Sauce

1/3 cup soy sauce
1 cup water
1/4 tsp ginger
1/4 tsp garlic powder
1/3 cup packed brown sugar
1 tbsp honey
2 tbsp cornstarch
1/4 cup cold water

Mix all but the cornstarch and 1/4 cup of cold water, in a sauce pan over medium heat. Mix cornstarch and water. Stir til dissolved. Add to sauce pan. Heat until thickened. Toss wings in sauce and serve.

Lemon Pepper Wings

Lemon Pepper Sauce

1/2 cup butter or margarine
1 tsp lemon juice
1 tsp minced garlic
lemon pepper to taste

Combine ingredients in a sauce pan and simmer for a couple of minutes. Toss wings in sauce and serve.



I made Melissa's Melissa's Supreme Pizza Stuffed Mushrooms. Click here for her recipe. BTW... hers are much prettier than mine!!! ;-)



I made Amiee's Jalapeno Corn Dip. I didn't have the jalapenos so I added Cayenne Pepper instead. :-)



I changed these up a bit the usual recipe is...

Oyster Crackers (12oz bag)
1/4 cup oil
1 package Ranch Dip Mix
1/2 tsp garlic powder

I added 1/2 tsp lemon pepper for a kick!

Mix ingredients in a plastic container with an air tight lid.  Shake crackers and flip container every 10 minutes or so. I make these a day ahead for the oil and flavors to set.



To change this Chocolate Chip Cheeseball up, I added some peanut butter to the original recipe! I left out the vanilla because I had vanilla wafers to go with it.

4th of July at "The Cabin"

The Elliott family always has a big BBQ for the family reunion on the 4th of July. Years back it was held at "The Cabin", way back in the swamp behind my parent's and Grandparent's homes. Oh, the memories that it all brings back. The men would get together early in the morning and BBQ a whole hog over live coals. 

That's what we call a "Pig Pickin"!

The women would bring the side dishes. 
I remember Mama and I rolling lemons and making the fresh lemonade.

  At the end of the meal, you could hear
Cousin Mac yelling, "Ice Cream! Come get your ice cream!"

Cousins:
Some of this was before my time or I just missed out on the fun. My cousins, Kathy, Deepy and David remember most of this. I do remember the cabin and the hill going down to it. The hill was so steep that you couldn't see down it until you had crested the top. That hill could be fun, especially if it rained. More than once after a good rain storm, a car would come sliding sideways down it. One year, the kids were sliding down the hill. It was Deepy’s turn to slide. He started down the hill and Kathy noticed a car coming and hollered at Deepy to lay down. He did and the car ran over Deepy. One year, Cousin Kenneth was driving Uncle’s El Camino. He had Tommy, Deepy and David on the tailgate, when he hit a mud hole and threw them out the back.

There was Uncle Louie, who fell out the boat. 
He had to be towed back to the bank because
he was too big for them to pull back into the boat.

There was Cousin Ann trying to teach Kathy how to smoke...

After Daddy put in the pool at the house, we made it a tradition to go back to the house after the reunion and go swimming. Mama used to make a big plastic gallon pitcher full of her poolside lemonade in the summertime. She would put it in the freezer and it would turn to slush. It was like a lemon-lime daiquiri, but slushy not icy. She’d get her raft and a big glass of ‘Lemonade’ and float for hours.

One hot summer afternoon, Deepy and Charlie were swimming. Mama was floating on her raft soaking up the sun. Her lemonade was over by the side of the pool. Everybody was enjoying the water and the lemonade. About that time Charlie said, “Hey, Uncle!” Mama looked up and Uncle (Dargan, who never drank) was walking over to her glass. She paddled as hard as she could, but he already took a gulp. He set it down and said, “Now, that’s the best lemonade I’ve ever tasted! Got any more?” Mama said, “Well, thank you! But Sorry! That was the last glass!”

Judy’s Poolside Lemonade

1 12oz can frozen Lemonade Concentrate
1 6oz can frozen Limeade Concentrate
36 oz 7-Up
1 fifth Bacardi Rum

Mix ingredients in gallon pitcher. Freeze until slushy (at least 24 hours).
To serve: Stir with large metal spoon (mixture will freeze on top, but the center will be soft). Spoon into plastic glass.

Grandmama Elliott’s 1000 Island Dressing



I remember spending wonderful times with my Grandmama Elliott. I even got to spend the night from time to time. I remember one night I was startled awake by a deep voice. "Do you want me to make you some breakfast? How bout some pancakes?" It was my Grandmama talking in her sleep. She was already planning our next day in the kitchen.
 When I was little, she would allow me in the kitchen to watch her cook. She moved slowly and purposefully around the small country kitchen. She taught me how to make this dressing in a small coffee cup... just enough dressing for the two of us. 


Grandmama's Thousand Island Dressing
In a coffee cup combine about 2 Tablespoons of Mayonnaise and 1 Tablespoon of Ketchup. Mix. Add mayo or ketchup depending on color. 
Add about a 1/2 teaspoon of sweet pickle relish. Mix, cover, and refrigerate.

Elliott's Strawberry Ice Cream Pops


A while back, I wrote the post on how to make Homemade Ice Cream in a bag. My son, Elliott loves the way it tastes and loves to make it himself. I thought by now my 14 year old son would think that this is no longer cool to do... Last night, he got out the strawberries (which he wrote on his part of the grocery list) and decided to make his own ice cream.


Of course he turns away!
He's "churning" the ice cream.


What you need:

  • 1 tablespoon Sugar
  • 1/2 cup Milk
  • 1/4 teaspoon Vanilla
  • 6 tablespoons Rock Salt or Kosher Salt
  • 1 pint size plastic bag
  • 1 gallon size plastic bag
  • Ice


What you do:
Put sugar, milk and vanilla in the small bag and seal it good and tight. Fill the big bag half way with ice and the salt. Put the small bag inside the big bag with the ice and salt. Shake and roll the bags around for about 5 minutes. Wipe the salt water of the top of the small bag and open carefully. Voila! Ice Cream

Tip:
The ice and salt gets really cold, so give the kids oven mits or a towel to handle the bags.

Next, he cut up the strawberries...

so you don't get salty water in the ice cream.

"Around The Kitchen Sink" with Heather King Tallman

Back on May 10th, Heather invited me to join her show by calling in that Thursday night. It was the Thursday before Mother's Day, and of course, the topic was about Moms. She asked me to share a little bit about my cookbook... "Mama's Cookbook". She told me that each call was about 2 minutes, and I think I talked about that long and kind of wrapped it up... she was so generous, and she asked me more questions and guided me through the entire call and process! Thank you Heather for being so generous and kind. Thanks for inviting me! Around The Kitchen Sink is wonderful, and you are the perfect hostess!


My hubby surprised me by taping this clip of our interview, and I got the idea of the slide show running while it plays. I think we did a pretty good job... What do you think? :-) Just don't make fun of my accent! LOLOLOLOLOL

Southern Slaw Dog... with Chili

It's the perfect weekend to grill out. Throw some hot dogs and hamburgers on and have a party! Take a dip in the pool and enjoy a slice of cool watermelon (that has been floating around and chilling in the pool), while the kids see how far they can spit the seeds!

I started watching Mama make this slaw when I was little and graduated to helping. She never measured. It was always a splash of this or a sprinkle of that. So, I hope this describes enough for you to follow. It just takes practice to get the taste right… And the picture is how I like to eat it! Yum! 


Mama's Slaw


1 Head Cabbage, grated
2 Carrots, grated
Mayonnaise
Lemon
Sugar
Salt & Pepper to taste


Grate the cabbage, then grate the carrots. I usually look at the color to know how many carrots to use. Sprinkle lightly with sugar. (Probably about a teaspoon or so) Sprinkle with lemon juice. I usually put two fingers over the mouth of the bottle and sprinkle about three or four shakes. Add salt and pepper to taste. Add enough mayo to bind it together. It will get soupier as it sits. Taste and adjust your seasonings.

Celebrating Birthdays!


My beautiful Mama would have been 68 years old today!!! We always kind of combined Mother's Day and her birthday and had one long celebration. She finally bought a time share at the beach for her birthday. During the week of her birthday, she spent it at the condo at the beach, or should I say ON the beach! She eventually bought a more permanent lot with a trailer on it so she could pick up and go to the beach anytime she wanted! She spent her life doing for others, and now it was time to spend a little time just for Judy! Of course, she took me with her a lot! :-) We all liked spending time at the beach, even tho it could get pretty crowded at times! Mama could make any time or place into an event to be remembered! The last time I talked to my Mama, she was getting ready for a meeting to discuss our small town festival (The Possum Trot!) and it's events... She was forever planning a party!

I found a note (below) to me in Mama's recipes. Mama always had the opinion that you do what you need to do and take shortcuts when you need to, to get the job done... That doesn't mean that you tell everyone your shortcuts!
                                                        
When my Grandmama Elliott turned 80 years old, Mama hosted a surprise party for her. She had me and my cousin, DP run to town and pick up two shefflera trees for the the dinning room where she had the food set up. "Miss Ruth" came over to Mama during the party and commented on the beautiful trees. Mama looked at her and said, "Actually, I owe those beautiful trees to the hard work and care of Lynn and DP!" Miss Ruth was flabbergasted, "You're kidding!" I looked at Mama with a puzzled look I guess, because she leaned over and whispered, "Just say... I just did what I needed to do! Because that's the truth!" She backed up and smiled and winked at me before she returned to the party.

Mama's Note to me...

Judy’s Homemade Mayonnaise 
"Duke's Mayonnaise at Piggly Wiggly!"
"Not worth the trouble to make, in my opinion."
"But if you have to try it.......this one's not bad...."
Pour 1/4 cup oil into blender. Add 1 tsp vinegar, 1 tbsp lemon juice, 1 egg, dash salt, and 1/4 tsp dry mustard. Cover and blend. While blender is running, remove cover and add another 3/4 cup oil in slow steady stream. Remove to jar and refrigerate.
