Hot Dog Chili




Hot Dog Chili

1 lb ground beef
1/2 cup chopped onion
2 cloves garlic minced
1 (15oz) Tomato Sauce
1 Tablespoon Brown Sugar
1 1/2 teaspoons Worcestershire Sauce
2 teaspoons Chili Powder
1/4 teaspoon Black Pepper

Cook hamburger, onion and garlic until meat is no longer pink. Drain. Stir in tomato sauce, Worcestershire, chili powder and pepper. Simmer for 3-4 minutes.

Chili and Cornbread


I found some beans, onions and tomatoes in the pantry, and I had some hamburger in the freezer! Good time for a giant pot of chili! 


For the Beans:

1 lb dried Red Kidney Beans
4 cups water, or stock
1/2 tsp dried, minced onion
1 tsp minced garlic
salt and pepper to taste

Rinse and drain the beans several times. Add the water, onion, garlic, salt and pepper to a large pot and cook for a few hours or until beans are tender.

To finish the Chili:

1-2 pounds ground lean beef
1 onion, chopped
2 cans diced tomatoes, drained

4 tablespoons of chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon cayenne pepper
2 teaspoons paprika
2 tablespoons ground cumin
salt and pepper to taste

Cook hamburger and onion until meat is done. Drain off fat. Add tomato and stir. Add to the beans. Add the seasonings and stir until dissolved and mixed well. Simmer until chili is the thickness you like. I usually let mine simmer for about 45 minutes. Serve with cheddar cheese, sour cream and cornbread!


For the Cornbread: I cheated and just used a mix with 1/3 cup milk and 1 egg. I used my mini muffin ceramic pan.

Homemade Chili

It's cold outside, and it actually snowed in the midlands of South Carolina this morning, for about 15 minutes! Wow! That was a close one! LOL Needless to say, there isn't a loaf of bread or a gallon of milk left in the stores, so I won't even try to venture out to the store! I found some beans, onions and tomatoes in the pantry, and I had some hamburger in the freezer! Good time for a giant pot of chili!

Pulled Pork Chili


This was really a recipe that just kept growing. It's called add what you can find, when the pantry is extremely low! LOL  It started out as a pot of beans with some left over pork for seasoning. Then I thought to add some chili seasonings, and Pulled Pork Chili was done!


I started with one pound of dried kidney beans. I soaked them in hot water for a couple of hours. I rinsed them and put them in my stock pot with plenty of water or stock to cover them. I added some dried minced onion, garlic powder and salt & pepper. Cook them for a few hours or until nice and tender. I shredded some of the left over pork loin roast. and added it to the pot.

It was yummy on it's own!!!

I had a couple of packets of chili seasoning mix in the pantry, so I added one packet. The pork already had tons of flavor, so I really didn't have to add anything else. I did add some Colby/Jack Cheese and sour cream for garnish! Throw in some cornbread or crackers, and it's a one bowl comfort meal!


Ingredients:

1 lb dried Red Kidney Beans

1 tsp minced garlic, or 1/2 tsp garlic powder
salt and pepper to taste

1-2 cups of shredded or pulled pork
4 tablespoons of chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon cayenne pepper
1 teaspoon dried oregano
2 teaspoons paprika

2 tablespoons ground cumin
salt and pepper to taste

Rinse and drain the beans several times. Add the water, onion, garlic and salt and pepper to a large pot and cook for a few hours or until beans are tender. Add the seasoning and stir until dissolved and mixed well. Stir in the pork and heat through. That's it! You're done!

Mama's Southern Slaw Dawg!

It's the perfect weekend to grill out. Throw some hot dogs and hamburgers on and have a party! My Mama's favorite was a good ole Southern Slaw Dawg! We used to go to the mall in Sumter and visit Orange Julius (at the time... now closed)... a great excuse to get a slaw dog! I never could get them to understand that chili on a slaw dog is a good thing! They always asked me to repeat my order! It was always delicious, but NOTHING compares to Mama's slaw on a hot dog! 


In order to get all the toppings on the hot dog
and still be able to fit it in your mouth... 
scoop out the bread from the top of the bun,
leaving a shell to cradle the dog! (as shown in the picture above)


I started watching Mama make this slaw when I was little and graduated to helping. She never measured. It was always a splash of this or a sprinkle of that. So, I hope this describes enough for you to follow. It just takes practice to get the taste right… And the picture is how I like to eat it! Yum! 

Mama's Slaw

1 Head Cabbage, grated
2 Carrots, grated
Mayonnaise
Lemon
Sugar
Salt & Pepper to taste

Grate the cabbage, then grate the carrots. I usually look at the color to know how many carrots to use. Sprinkle lightly with sugar. (Probably about a teaspoon or so) Sprinkle with lemon juice. I usually put two fingers over the mouth of the bottle and sprinkle about three or four shakes. Add salt and pepper to taste. Add enough mayo to bind it together. It will get soupier as it sits. Taste and adjust your seasonings.

Southern Slaw Dog... with Chili

It's the perfect weekend to grill out. Throw some hot dogs and hamburgers on and have a party! Take a dip in the pool and enjoy a slice of cool watermelon (that has been floating around and chilling in the pool), while the kids see how far they can spit the seeds!

Mama's Slaw
