Caramelized Mushrooms

I wanted to see if the same crock pot method I used in making The Perfect Pantry's Caramelized Onions would work for my mushrooms, and it worked perfectly! I followed exactly the same procedure and they came out great, not at all soupy as I thought they would be...

 I took 1 pound of mushrooms, sliced them
and added a little olive oil.

After about 3 hours... 

I added some garlic and soy sauce!
I cut them down to warm and went to bed...
Yes, I started these late at night again, but I went to bed
and left them alone! LOL


This is what I found this morning... perfect!

I added a little more garlic and soy sauce to taste,
and let them cook another hour uncovered, on high...
Amazing flavor!!!

Caramelized Onions

I ran across this blog for caramelizing onions in the crock pot! It is so easy and really needs no attention, unlike the stove top method. I did pay attention however... mainly because I'm nosy and impatient and curious! Next time, they're going in the pot and I'm going to bed! LOLOL

Here's how it went for me!


This is all you need...
3 pounds of onions, cooking spray and olive oil!

Cut the ends off and peel the outer layer.
Cut them in half, then slice them thinly...

Spray the crock pot with cooking spray
and dump in the sliced onions!
Drizzle with a little olive oil. I used about 1T...
Started cooking at 7:30pm! (yeah, I didn't think that through!)

After one hour of cooking time, they've already cooked down a lot.

 About 11pm they looked like this... still need time to cook more!

At 12:30am, I said...
Well, it's late, and I'm going to bed! I'll just turn them to
"Keep Warm" which is a very, very low simmer.

This morning, this is what I found!
YUM!!!

I think I'm going to make Mama's famous French Onion Soup!!!

Fresh Herb Vinaigrette




You can use pretty much any herb you like for this dressing. I love basil and am looking forward to having more fresh herbs in my garden this year. Try your favorite herb or try my favorite... basil! :-)

Fresh Basil Vinaigrette

1/2 cup white wine vinegar
1 cup extra virgin olive oil
a few basil leaves
2 cloves garlic
1 tsp white sugar
1 tsp kosher salt

In a blender or food processor combine vinegar, basil, garlic, sugar, and salt. Process until the basil and garlic are minced well. Continue to process while adding oil in a slow steady steam. Process until dressing is emulsified.

Sweet Italian Sausage, Onion and Potato Bake

I still have sausage in the frig from the Johnsonville Italian Sausage Party I had last weekend. So I decided to put it to good use! There really isn't a recipe... I just used the what I had on hand!
  • Sweet Italian Sausage, cut into chunks
  • Red Potatoes, cubed
  • Yellow Onion, large chopped
  • Olive Oil
  • Basil
  • Lemon Pepper
  • Garlic Powder
  • Kosher Salt
Cube the Sausage and Veggies...


 Coat with a little Oil...

Add Seasonings...


 Mix and bake at 400 degrees for about 
45 minutes stirring occasionally 
so everything gets golden brown.


Done!... and it was gooooood!
