Fish Fry... with two sauces for dipping!

Thanks to my brother Charlie, I am stocked up on catfish once again. 



He is my main source, and why not? He brought in this 42 pounder!



I have already baked some in the oven with onion and lemon. (my favorite way to bake fish) So now on to frying some! 



















Easy Fish Fry
  • Fish... catfish, cut into nuggets
  • Oil for frying
  • 1 tablespoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon pepper
  • 1 cup flour
  • 1/2 cup yellow cornmeal
Mix flour, cornmeal and seasonings in a plastic container with lid (big enough to fit fish inside). Place fish in the flour mixture and carefully shake. Remove fish and fry in deep fryer set at 350 degrees until golden brown and fish floats.

I didn't have any relish for the tartar sauce,
so I just left it out. It was still very tasty!

Cocktail Sauce

1 cup ketchup
2 tablespoons fresh lemon juice (about 1 small lemon)
2 tablespoons prepared horseradish
dash Worcestershire sauce
few drops hot sauce
salt to taste

Combine and blend all ingredients well.

Tartar Sauce

1 cup mayonnaise
1 tablespoon sweet pickle relish
1 tablespoon minced onion (optional)
1/4 teaspoon garlic powder
2 tablespoons lemon juice 
salt and pepper to taste

In a small bowl, mix ingredients together. Season to taste with salt and pepper.

Easy Fish Fry... with two sauces for dipping!


Thanks to my brother Charlie, this is the first batch of three that I fried tonight!

Easy Fish Fry
  • Fish... catfish, cut into nuggets

  • 1 teaspoon garlic powder
  • 1 teaspoon lemon pepper
  • 1 cup flour

Soups, Stews, Bread and Cornbreads... Oh My!

In this crazy Polar Vortex of a winter, I think we all need a little something to warm up our bones. Yesterday/last night, our temperatures dropped 34 degrees. Not dropped to 34 degrees, but the temp dropped BY 34 degrees back into the 20s. That's a shocker down in the deep South in March with "Spring" arriving in about 15 days! Baked Catfish and Hush Puppies

Even though it was a wet weekend, my guys found enough of a break in the weather to catch a couple of catfish...

This one was 20-25 lbs!

Elliott made a crawfish trap.

 So far he's only caught one, but, hey, he caught one!!!

Well, after the fish were cleaned and cut into fillets,
I baked it in Italian dressing, lemon and onion.

Mama's Catfish Stew

Usually, I serve this over rice, but this was my plate,
and I didn't want the added starch.
I just ate the catfish and sauce. :-)

This is typical Judy Bradham Elliott!!! LOL
I found this recipe in Mama’s handwriting on a piece of torn notebook paper (about 2 inches) grocery list on one side…no title, and directions on the back. Click on the pictures for a clearer view, if you'd like! :-)  This is the only catfish stew recipe she had…but it works. It is perfection!


This is the grocery list for a dinner party...
                            Catsup........... Bread........... Bacon
                            Mustard.......... Drinks.......... Butter
                            Onions........... Coffee.......... Sweets
                            Butts Meat**... Sugar
                            Rice............... Cream
                            Salt................ Milk
                            Pepper........... Eggs

Cook Butts Meat until almost done. Add cut up onion. Cook. Drain off grease. Add fish. Add catsup to cover fish real good. Add 2 tablespoons mustard. Add salt and pepper and one cup water. Don't stir.* Twist pot. Simmer until done. Serve over rice.

and on the back... instructions for the catfish stew.

* Don't stir the pot, because it will break up the fish.

**Use Fatback or Bacon in place of the Butts Meat if you can't readily find it.
