Fish Fry... with two sauces for dipping!

Thanks to my brother Charlie, I am stocked up on catfish once again. 



He is my main source, and why not? He brought in this 42 pounder!



I have already baked some in the oven with onion and lemon. (my favorite way to bake fish) So now on to frying some! 



















Easy Fish Fry
  • Fish... catfish, cut into nuggets
  • Oil for frying
  • 1 tablespoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon pepper
  • 1 cup flour
  • 1/2 cup yellow cornmeal
Mix flour, cornmeal and seasonings in a plastic container with lid (big enough to fit fish inside). Place fish in the flour mixture and carefully shake. Remove fish and fry in deep fryer set at 350 degrees until golden brown and fish floats.

I didn't have any relish for the tartar sauce,
so I just left it out. It was still very tasty!

Cocktail Sauce

1 cup ketchup
2 tablespoons fresh lemon juice (about 1 small lemon)
2 tablespoons prepared horseradish
dash Worcestershire sauce
few drops hot sauce
salt to taste

Combine and blend all ingredients well.

Tartar Sauce

1 cup mayonnaise
1 tablespoon sweet pickle relish
1 tablespoon minced onion (optional)
1/4 teaspoon garlic powder
2 tablespoons lemon juice 
salt and pepper to taste

In a small bowl, mix ingredients together. Season to taste with salt and pepper.

Easy Fish Fry... with two sauces for dipping!

Easy Fish Fry
  • Fish... catfish, cut into nuggets

  • 1 teaspoon garlic powder
  • 1 teaspoon lemon pepper
  • 1 cup flour
  • 1/2 cup yellow cornmeal

Pan Fried Tilapia with Dill Sauce



  • Fish... catfish, brim, etc (This time I used Tilapia)
  • 1/4 cup Oil for frying
  • 1 tablespoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon lemon pepper
  • 1 cup flour
Preheat oil in a shallow frying pan on medium-high heat. Mix flour and seasonings in a plastic container with lid (big enough to fit fish inside). Place fish in one at a time and carefully shake. Remove fish and fry until golden brown. It only takes a couple of minutes per side. Serve with Dill Sauce or Cocktail Sauce. I love both!

**One secret is for the pan and oil to be hot. This way the flour stays on the fish and it fries crisp rather than boiling in the oil and becoming soggy.


Dill Dressing

1/2 cup mayonnaise
1/2 cup sour cream
1 tbsp dried dill weed
1 tsp lemon juice
1/3 cup milk
1/4 tsp garlic juice*
Kosher salt, to taste
Cracked black pepper, to taste

Combine ingredients. Chill for 1 to 2 hours.

*You can substitute a little garlic powder. I just prefer not to have chunks and bits of raw garlic in the dressing.


Cocktail Sauce

1 cup ketchup
2 tablespoons fresh lemon juice (about 1 small lemon)
2 tablespoons prepared horseradish
dash Worcestershire sauce
few drops hot sauce
salt to taste

Combine and blend all ingredients well.

I rounded out the meal with a Caesar Salad!

Fish Fry


I've been craving fried fish for a while now. When I took Craig to the hospital for his kidney stones, I saw a sign at the IGA (independent grocers association) announcing that they has Tilapia on sale. They were selling it frozen, individually wrapped (vacuum sealed) and by the 3 pound bags. I had to get a bag. I've already made 2 meals out of it (baked and fried), and I have enough left for another meal. In this picture... I had to go watch Elliott do a jump on his dirt bike, and Craig wasn't watching the temp... so they got a little brown, but they were very delicious, not burnt at all!!!

My Trip to get the crawfish... and a Crawfish Boil!

Yesterday I decided to go to Elliott's Landing and get some crawfish! I didn't figure that my son would eat much, so I just got 4 pounds. You might say, "Just 4 pounds???" Yes, that sounds like a lot, but if you are familiar with these little creatures, you know that's not really all that much. You buy crawfish whole and alive... The only other way to buy them is already cooked. Once a crawfish dies, it cannot be sold and is discarded. The meat is in the tail and the rest of the body, or head is dead weight... Yes, I know that you can suck the juice out of the head, but that is just that... juice! I did have quite a few that I cracked the claws and got a tiny bite out...

Crawfish Boil...
I added onions and sausage.
I didn't have any potatoes or corn-on-the-cob.

I had to peel crawfish for my son who hurt his hand riding his
dirt bike this afternoon. He ate a lot! I didn't think he would!
I got awfully hungry feeding him...
He ate a lot faster than I could peel! LOL

Cocktail Sauce
