Chocolate Swirl Delight

 





1 1/2 boxes (13 oz each) Swiss Cake Rolls
2 3/4 cups Milk
2 pkgs (3.9 oz each) Instant Chocolate Fudge Pudding Mix
2 cups Whipped Topping


Cut each cake roll into six slices. Reserve any broken chocolate coating for garnish. Line the bottom and sides of a spring from pan with cake slices, covering completely. 

Whisk milk and pudding mixes for about 2 minutes. It will be thick. Spread on the bottom layer of cake rolls. Cover with whipped topping. Sprinkle with the broken chocolate pieces. Refrigerate for 2 hours before serving.

Ice Cream Sandwich Cake

I made this cake yesterday for my hubby. It's not the prettiest dessert, but it is OH SO GOOD... How can you go wrong with ice cream sandwiches???



Ice Cream Sandwich Cake

2 boxes Ice Cream Sandwiches
16 oz tub Whipped Cream Topping
8 oz jar Caramel Ice Cream Topping
8 oz jar Hot Fudge Ice Cream Topping
Mini Chocolate Chips, Chocolate Shavings or Ground Nuts

Line a loaf pan with plastic wrap. Spread a layer of whipped cream in the pan, then layer with sandwiches. Pour on the caramel topping, then the hot fudge. Top with another layer of sandwiches. Continue to layer until all sandwiches are used. Finish with a covering of Whipped Cream. Freeze for about 3 hours. Invert cake onto serving dish and peel away plastic wrap. Garnish the cake with your choice of toppings.

No Bake Cookies and Cream Cheesecake

One of the Hubby's go-to snacks is Oreos and Milk, so I decided to follow that theme with this frozen cheesecake. I hope you try it. Enjoy! 


No Bake Cookies and Cream Cheesecake


For the Crust:
12 Oreos
4 tablespoons unsalted butter, melted

For the Filling:
8 ounces cream cheese, softened
1/4 cup sugar
8 oz Whipping Topping (such as Cool Whip)***
10 Oreos chopped

6 Oreos, chopped (topping)


To make the crust: Add the Oreos to a food processor and process until you have fine crumbs. Transfer the crumbs to a mixing bowl, add the melted butter, and mix until the crumbs are moistened.

Put the mixture into a 7-inch spring form pan, and firmly press it down into one even layer. Transfer to the refrigerator to chill while you make the cheesecake filling. Refrigerate while making the filling. 

To make the filling: Using a stand mixer fitted with the whisk attachment, or in a large mixing bowl using a handheld mixer, beat the cream cheese until smooth. Add in the sugar and mix until well combined.

Add the whipped topping to the cream cheese mixture and gently fold it in or mix it in on low speed with your mixer until just combined. Then, fold in the chopped Oreos.

Remove the springform pan from the refrigerator, scoop the cheesecake filling onto the crust, and spread it around into one even layer.

Cover and freeze for 1-2 hour for a quick set. Remove the no-bake cheesecake from the pan, slice and top with cookie chunks. Store leftovers, if there are any leftovers, in the freezer.




***You can substitute heavy cream for the 8oz cool whip if you want to make your own.
  • 1 cup cold heavy whipping cream, whipped
Pour the heavy whipping cream in a separate bowl. Start mixing on low speed, then increase the speed to medium-high until the mixture thickens and stiff peaks form.

No Bake Banana Pudding Cheesecake

I took two of the hubby's favorite desserts and combined them into one! 



Banana Pudding Cheesecake!

Graham Cracker Pie Crust*

Base:
8 oz Cream Cheese, softened
1/4 cup Sugar
1 ripe Banana, mashed
Banana Pudding mix, (prepared with 1 1/2cups milk) 

Combine cream cheese and sugar in a large bowl. Mix until smooth and sugar is dissolved. Add 1 cup of pudding to the cream cheese mixture. Pour into pie crust and chill.

Topping:
8 oz Cream Cheese, softened
1/4 cup sugar
4oz whipped topping (such as Cool Whip)
1/2 cup Banana Pudding 

Combine cream cheese and sugar in a large bowl. Mix until smooth and sugar is dissolved. Add 1/2 cup of pudding to the cream cheese mixture. Stir in the whipped topping. Pour on top of base. Refrigerate for several hours or do a quick set in the freezer.

Garnish with graham cracker crumbs and a mini vanilla wafer if desired. 

* For homemade pie crust...

1 1/2 cups Graham Cracker Crumbs
1/4 cup Sugar
4 T melted Butter

Combine and press into the bottom of a pie pan/plate.

Cherry Delight Pie




This dessert has been called so many different things, but I grew up with it being called a layered delight dessert. 


8oz package of Cream Cheese, room temperature
1/4 cup granulated sugar
1/2 tsp Vanilla
8oz tub of Whipped Topping (like cool whip type)
1 can Cherry Pie Filling
Graham Cracker Crust

Beat the cream cheese and sugar until smooth. Add vanilla and mix until combined. Fold in Cool Whip. Spread mixture in pie crust and refrigerate until firm. Top with cherry pie filling. Top with more whipped topping if desired.

Cherry Delight Dip


I made this dip for my son's 16th Birthday Party, and it was a big hit! Both of my daughter-in-laws asked for the recipe so they could make it for their families! Now that's a compliment if I ever heard one!!!

8oz package of Cream Cheese, room temp
1/2 cup Marshmallow Fluff
1/2 tsp Vanilla
8oz tub of Cool Whip
1 can Cherry Pie Filling

Beat the cream cheese and fluff until smooth. Add vanilla and mix until combined. Fold in Cool Whip. Spread in a serving dish and top with cherry pie filling. Serve with graham crackers or vanilla wafers.
