Greek Shrimp and Rice

I was looking through Mama's cookbooks looking for something different. I found an old fund raiser cookbook from 1975 called Santee Supper ~ A Book Of Recipes From The South Carolina Lowcountry. I found this seafood recipe, and I had everything on hand! I added Cavender's Greek Seasoning, of course!



Greek Shrimp and Rice 

1 medium onion, chopped

2 tablespoons butter

1 ½ cups cooked rice

1 pound raw shrimp, peeled and deveined

½ cup Feta cheese crumbles

1 can petite diced tomatoes with juice

2 cloves garlic, minced

1 Tablespoon Cavender’s Greek Seasoning

Sprinkle of dill weed 

Salt and Pepper, to taste*


Sauté onions in butter in a large skillet over medium-high heat. Add tomatoes, garlic and Greek Seasoning to onions. Add shrimp and cook until pink. Be careful not to overcook the shrimp.


Lower heat to medium. Add rice and stir until rice is heated through. Season with salt and pepper to taste. Sprinkle with Feta cheese and dill weed.


I added kalamata olives to my plate,
 because the hubby doesn't care for them in his.

Stuffed Biscuits


Yesterday, I found a 4 pack of canned biscuits that I had bought for the party the other week and never got around to 'whatever' I planned to make out of them. I can't even remember anymore! Maybe Monkey Bread... Hmmmm! Never mind! I made these last night instead...

I did two versions... Chicken Bacon Ranch and Greek Feta and Black Olive

Chicken Bacon Ranch Stuffed Biscuits

Canned Refrigerated biscuits, 10 per package
1/2 cup diced, cooked chicken breast
1/2 cup shredded colby jack cheese
1/4 cup crumbled bacon, or more to taste :-)
1/4 cup ranch dressing, or enough to bind the mixture
a sprinkle of basil
Kosher salt & pepper

Greek Feta and Black Olive Stuffed Biscuits

Canned Refrigerated biscuits, 10 per package
1/4 cup diced, cooked chicken breast
1/2 cup Feta crumbles
1/4 cup black olives, diced
1/4 cup Greek Dressing... I suggest The Black Peppercorn's Greek Salad Dressing. It's the best I've found so far! Awesome!

Preheat the oven to 400 degrees. In two separate small bowls, mix the fillings and set aside.


Working one batch (flavor) at a time, open a can of biscuits, working one at a time. With your fingers, flatten the biscuit to about 3 or 4 inches across. Put about a teaspoon of filling in the center. I closed them two different ways.



For the Greek Biscuits, I folded them in half and closed them with the tines of a fork.



For the chicken bacon ranch, I flattened them and brought all the edges together over the filling making a ball. I prefer this method and will make them all like this next time! Bake them for about 10 minutes, take them out and brush them with some melted butter with minced garlic in it and sprinkle with Kosher salt. Pop them back in the oven for a minute or two.

Classic Greek Salad



2 heads romaine lettuce, torn into chunks*
1 bell pepper, sliced
1 small onion, halved and thinly sliced
6 pepperoncini peppers (or more)
12 kalamata olives
1 cucumber, sliced and cut in half
1/2 cup feta cheese, crumbled

1/3 cup white vinegar
2/3 cup olive oil
1 tablespoon lemon juice
1 garlic clove, minced
1 teaspoon oregano (or more to taste)
1/2 teaspoon black pepper (or more to taste)
1 teaspoon sea salt

For the dressing: combine vinegar, minced garlic, oregano and lemon juice, slowly whisk in olive oil, season with salt and pepper.

For salad: layer romaine, bell pepper, onion, cucumber, kalamata olives, feta cheese, and top with pepperoncini peppers.  Whisk dressing and drizzle over the top.

* Mama's notes: Never cut lettuce... lettuce should be torn into chunks!
