Apple Cinnamon Roll Monkey Bread


Apple Cinnamon Roll Monkey Bread

1/2 cup sugar
1 teaspoon ground cinnamon
2 cans refrigerated Cinnamon Rolls with Icing
1/4 cup butter, melted
1 can apple pie filling with fruit

Preheat oven to 350°F. Spray a 13x9-inch glass baking dish with cooking spray. 

In a large resealable plastic bag, mix sugar and cinnamon. Remove rolls from cans. Refrigerate icing containers. Separate dough into rolls; cut each into 6 pieces. Add roll pieces to a large bowl; drizzle with melted butter, tossing to coat.

Add half of the roll pieces to the bag with sugar and cinnamon; seal and shake to coat pieces, breaking up any large clumps. Remove from the bag and arrange pieces in the baking dish. Repeat for remaining dough.


In a small bowl, add apple pie filling; cut apples into 1-inch pieces. Drop tablespoonfuls of apple pie filling on top of dough, creating pockets of filling, and spacing about 2 inches apart.


Bake for 30 to 35 minutes or until dough is baked through in the center and deep golden brown around edges. If it starts to brown too much, cover with foil for the last 5 minutes of baking. Cool for 10 minutes.

In a small microwavable bowl, add icing from both containers. Microwave uncovered on high for 15 to 20 seconds or until stirred smooth and thin enough to drizzle. Drizzle icing on top before serving.

Best Ever Cinnamon Rolls

This is a monster 12" cake pan!

For the dough:
1 package active dry yeast
¾ cup warm water
1½ cups warm milk
½ cup sugar, divided
1 teaspoon salt
4½ cups all-purpose flour, divided
¼ cup shortening, melted


For the filling:
1/4 cup brown sugar
1 teaspoon flour
1 1/2 teaspoons cinnamon


For the glaze:
1 cup 10X sugar
1 tablespoon milk


In a large bowl, dissolve yeast in warm water. Stir until dissolved. Add warm milk, ¼ cup of the sugar and salt. Stir in 3 cups of the flour. Mixture will be very wet. Let rise in a warm place for about 1 hour.
After the first rising, stir in the remaining ¼ cup of sugar and melted shortening. Add remaining 1½ cups of flour. Dough will still be wet. Let rise until double, about an hour. 

Mix together the cinnamon, sugar and flour and set aside.
Mix the sugar and milk in a small bowl and set aside.
After the second rise, the dough will be very wet. Dump dough on a well-floured surface and divide in half. With a floured rolling pin, roll each half into a large rectangle, about 18 inches long. Spread each rectangle with the cinnamon sugar mixture. Roll them up tightly. Cut into 1 inch slices. Place them in well greased cake pans and let rise until doubled.
Preheat oven to 350 degrees. Sprinkle with any of the sugar mixture that escaped when rolling and bake at 350 degrees for about 20 minutes or until golden brown and all puffed up in the center. Drizzle glaze over hot rolls!

Orange Rolls



1 can Crescent Rolls

1/4 brown sugar
1 teaspoon flour
1 teaspoon cinnamon

1 cup 10X sugar
1 tablespoon orange juice
1/4 teaspoon orange zest

Mix the sugar, juice and zest in a small bowl and set aside...

I unrolled the sheets (on wax paper) in two sections,
mainly because it fell apart. Press the seems together.

Mix together the cinnamon, sugar and flour. 

Generously cover the dough sheets with the cinnamon mixture. 

Then, roll them up as tightly as you can,
but don't mash them or the seams will come apart. 

I put them in a small cake pan (6") lightly sprayed with oil.

I mashed them down a bit... 

...and sprinkled them with a little of the
cinnamon mixture that was left on the paper.

Bake at 350 degrees for about 20 minutes
or until golden brown and all puffed up in the center.
Drizzle glaze over hot rolls!
Done...

Simple Breakfast Food

Yesterday, I posted a picture of an egg and a piece of toast on my Facebook page, and I received 88 comments so far. For the most part, the comments were nice and positive, but some were rude and negative. I received 384 'like's and 30 people shared this simple picture of a soft fried egg and a piece of pan fried toast.


I was told that this is toad in a hole, eggs in a nest, poached egg on toast and one eyed jacks. Actually, I made French Toast for my son and had a tiny bit of egg mixture left in the bowl. It only partially covered one side, so it's basically pan fried toast. I fried the egg because I don't care for syrup with French Toast. The picture above is of what I called:
 "A farm egg and buttered white bread toast... salt and pepper.It doesn't get any fresher, simpler or better... and I love runny eggs :-)"
I received several comments of 'yuck', 'ewwww' and one 'gross'. I had to laugh. I know that the runny or 'dippy' eggs are going to cause a knee jerk response, add some people even commented on a gag reflex problem. Again, I had to laugh, until a guy questioned the southern-ness of my dish. He labeled himself 'my Yankee self' and said... 
"Not particularly southern though. My Yankee self ate this long before moving here."
What did I say about the knee jerk reactions of earlier comments? LOL If you know me... I like to laugh! I like to be funny! But, I am a Southern Belle and us Southern Belles are a loyal and passionate lot. However, I'm not about to get into a debate on who invented the egg! I simply posted this picture with this heading:
"Someone said something earlier about me and my food not being "Southern". This is my daughter-in-law, and she didn't like that!!!"


Hee Hee Hee!!!




Here's a picture for the guy that told me that I forgot the bacon. I was out of bacon, but here's some bacon and some sausage too!

I never thought a picture of a simple fried egg and a piece of toast would cause such controversy! LOL

Monkey Bread


This recipe reminds me of Christmas time, cooler weather, sharing favorite dishes and family and friends spending time together. It reminds me of my Mom and all the times we cooked together making memories that last a lifetime. We used to travel to the mountains each year and go to the all the shops. There was a little place that was a Christmas Shop all year round. I bought one of my favorite cookbooks there... The Nutcracker Sweet. That is where I first found a recipe for this wonderful treat!



Monkey Bread

4 tubes refrigerator biscuits
¾ cup Sugar
 1 tsp Cinnamon

¾ cup Butter
1 cup Sugar
2 tbsp Corn Syrup
½ tsp Cinnamon

In a saucepan, heat butter, sugar, syrup and cinnamon to boiling. Cut biscuits into fours and roll into balls. Combine sugar and cinnamon and roll biscuits in cinnamon and sugar. Butter or spray a loaf pan. Stack biscuits into loaf pan. Pour syrup over biscuits and bake at 350 for 40 to 50 minutes. When partly cool, turn out onto serving platter. To serve, let each person pull pieces off. If desired, drizzle with basic sugar glaze. Recipe below…

Basic Sugar Glaze

2 cups Powdered Sugar
2 T Butter or Margarine, softened
1 t Vanilla
3 to 4 T Milk or Half-n-Half

Combine all ingredients, adding enough milk for desired consistency.
Makes 1 ½ cups glaze.

Easy Peasy Cinnamon Rolls

Yesterday, in-between rain showers, I went shopping for my usual catering job on each Wednesday night. While rambling around the grocery store, I thought I'd like to make some orange rolls or cinnamon rolls. I thought that while looking at the cans of the pre-made dough... the kind my hubby likes to buy and bring home to cook. I decided to go a step farther (Remember now, I always tell you... I'm not a baker!). I picked up a container (ok...yeah! It was a can!) of crescent rolls.  I knew that I had everything else at home. As a matter of fact, I picked up two cans, in case I goofed! I am not a baker... LOL
