Tempura Batter

¾ cup Flour, sifted
¼ cup Cornstarch
½ t Baking Powder
¼ t Baking Soda
1 cup Water
1 Egg

Sift together flour, cornstarch, baking powder and baking soda. Stir in water, then egg. Beat until smooth and frothy.

To deep fry:
Heat oil in deep fryer to 375 degrees. Fry food, turning as needed. Drain and serve.

Mama's Notes: “Great for shrimp, fish, onion rings, mushrooms, eggplant, even fried green tomatoes!”

Tips:
Use cold water to prepare the batter. Chilled light beer or Club soda can be substituted. For best results keep the batter cold by placing the tempura batter on ice.

Oil should be heated and kept at 375°F. Don't over-crowd the fryer because that drops the temp and batter will be soggy.

For an extra crispy coating, after the batter dip roll in Panko bread crumbs and then fry.

    1. This is a batter that is the consistency of a pancake batter of thinner. So, I would say that it would not work. However, I don't have an air fryer. So, I am not sure!
